Overview

OPPORTUNITY: AM Sous Chef

Join the Kitchen Management team as an AM Sous Chef, overseeing culinary operations and dish development to deliver an elevated guest experience that reflects a sense of place. Responsibilities include supervising kitchen staff to ensure efficiency, productivity, and quality; keeping menus current with culinary trends; documenting recipes and procedures; and being in charge of the kitchen during the absence of the Executive Chef or culinary management team.

Potential Career Path: Chef de Cuisine – Executive Chef

Essential Job Functions:

  • Coordinate menu tastings with the Executive Chef and culinary team.
  • Update recipes and dish guides, ensuring consistency.
  • Develop pairings and special off-menu items.
  • Assist in managing banquet services, ensuring proper preparation and staff training.
  • Oversee preparation of food for all meal periods, employee meals, events, and banquets, maintaining quality and quantity standards.
  • Assist with purchasing, inventory, and pricing monitoring.
  • Ensure storage areas are organized and stocked, leading by example.
  • Follow procedures for kitchen opening and closing.
  • Support training, scheduling, supervision, and discipline of kitchen staff, fostering morale and productivity.
  • Promote safety and sanitation standards, ensuring compliance and reporting hazards.

Essential Skills & Position Requirements:

  • Effective communication skills; receptive to constructive criticism.
  • Basic computer skills, including Microsoft Office.
  • Decision-making skills regarding profitability, service, waste control, and safety.
  • Strong personnel development and coaching abilities.
  • Flexible schedule; adaptable to guest and staff needs.
  • Professional appearance and demeanor.
  • Self-motivated, organized, detail-oriented, and composed.
  • High school diploma required; college or culinary school experience preferred.
  • At least 2 years of managerial kitchen experience.
  • Valid CA Food Handler Card within 30 days of hire.
  • Valid driver’s license with a clean record.
  • Availability to work weekends and holidays.
  • Ability to perform physical tasks, including standing, walking, lifting up to 50 lbs, and working in varying temperatures.
