Overview

OPPORTUNITY: AM Sous Chef

As a member of the Kitchen Management team, the AM Sous Chef will help lead culinary operations and dish conceptions to ensure an elevated guest experience that evokes a sense of place. Core responsibilities include supervising kitchen staff for optimal efficiency, productivity, and quality; keeping menus and outlets updated on culinary trends and best practices; documenting recipes and procedures; and being in charge of the kitchen when the Executive Chef or culinary management team are unavailable.

Essential Job Functions
  • Coordinate menu tastings with the Executive Chef and culinary team.
  • Update recipes and dish guides, ensuring consistency.
  • Develop pairings and off-menu items when appropriate.
  • Assist in managing banquet services, ensuring orders are filled, food is prepared, and staff is trained.
  • Oversee preparation of food for all meal periods, employee meals, events, IRD, and banquets, maintaining quality and quantity standards.
  • Assist with purchasing, maintaining pars, orders, and monitoring pricing.
  • Ensure storage areas and walk-ins are organized and stock levels are maintained.
  • Follow procedures to close the kitchen using checklists.
  • Support training, scheduling, supervising, reviewing, and disciplining kitchen staff to maintain morale and productivity.
  • Promote and comply with all safety and sanitation policies.
  • Maintain cleanliness and safety of work areas at all times.
  • Report any incidents, injuries, or hazards.
Essential Skills & Requirements
  • Effective communication skills; open to constructive criticism.
  • Basic computer skills, including Microsoft Office.
  • Ability to make impactful decisions regarding profitability, service, waste control, and safety.
  • Strong leadership and coaching skills.
  • Flexible schedule and ability to adapt to guest and staff needs.
  • Professional appearance.
  • Self-motivated, organized, detail-oriented, and composed.
  • High School diploma required; culinary or college education preferred.
  • At least 2 years of managerial kitchen experience.
  • Valid CA Food Handler Card within 30 days of hire.
  • Valid driver’s license and clean driving record.
  • Ability to work weekends and holidays.
  • Physical ability to stand, walk, lift up to 50 lbs, and work in varying temperatures.
