Overview

OPPORTUNITY: AM Sous Chef

As a member of the Kitchen Management team, the AM Sous Chef will help lead the culinary operations & dish conceptions to ensure an elevated guest experience that directly evokes a sense of place. Core responsibilities include supervising the kitchen staff to ensure optimal department efficiency, productivity & quality standards; keeping all menus & outlets up to date on culinary trends, best practices & creative opportunities for growth; documenting & recording all recipes & procedures in an accessible & timely manner; and being responsible & in charge of the kitchen when the Executive Chef or Culinary management team are off-property or occupied with special events or projects.

Essential Job Functions
  1. Coordinate menu item tastings with the Executive Chef & culinary management team.
  2. Update menu recipes, dish guides, & ensure consistency of execution.
  3. Develop pairings & special off-menu items, when appropriate.
  4. Assist in managing scheduled banquet services with the culinary management team, making sure orders are filled, food is prepped, & staff is trained for each event.
  5. Assist in managing the all-day IRD program as well as other menu & development initiatives.
  6. Oversee proper & efficient preparation of food for all PM meal periods, employee meals, special events, IRD, & banquets, ensuring quality & quantity standards are met.
  7. Assist purchasing supervisor with maintaining pars, orders, & monitoring pricing for all items as directed by the Executive Chef.
  8. Ensure kitchen storage areas & walk-ins are stocked & organized, setting standards by example.
  9. Follow all procedures to close the kitchen using Opening & Closing Checklists.
  10. Assist in training, scheduling, supporting, supervising, reviewing, & disciplining kitchen employees to maintain high morale & productivity.
  11. Promote & comply with all employee handbook policies & procedures.
  12. Ensure safe work practices of all kitchen staff, including compliance with safety rules & proper equipment handling.
  13. Maintain cleanliness & safety of work areas at all times. Ensure employees follow sanitary food guidelines.
  14. Document & report suspicious occurrences, incidents, injuries, & hazardous conditions.
  15. Practice safe work habits to prevent injuries.
Essential Work Skills & Position Requirements
  • Effective verbal & written communication skills; receptive to constructive criticism.
  • Basic computer skills, including Microsoft Office (Word & Excel).
  • Decisiveness regarding profitability, service quality, waste control, & safety standards.
  • Strong personnel development & coaching skills.
  • Flexible schedule; able to adjust to guests' & staff needs.
  • Professional appearance & grooming.
  • Self-motivated, organized, detail-oriented, & composed.
  • High School diploma required; college or culinary school experience preferred.
  • Minimum 2 years of managerial kitchen experience.
  • Ability to obtain a valid CA Food Handler Card within 30 days of hire.
  • Valid driver’s license & clean driving record.
  • Availability to work weekends & holidays.
  • Ability to perform repetitive motions, stand & walk for extended periods, and lift up to 50 lbs.
