Overview

OPPORTUNITY: AM Sous Chef

Join our Kitchen Management team as an AM Sous Chef, leading culinary operations and dish development to ensure an elevated guest experience that evokes a sense of place. Your core responsibilities include supervising kitchen staff for optimal efficiency, productivity, and quality standards; keeping menus and outlets updated on culinary trends; documenting recipes and procedures; and being in charge of the kitchen when the Executive Chef or culinary management team are unavailable.

Essential Job Functions:

  • Coordinate menu tastings with the Executive Chef and culinary team.
  • Update recipes and dish guides, ensuring consistency.
  • Develop pairings and special off-menu items when appropriate.
  • Assist in managing banquet services, ensuring orders, prep, and staff support for events.
  • Oversee preparation for all meal periods, employee meals, special events, IRD, and banquets, maintaining quality and quantity standards.
  • Assist with purchasing, maintaining pars, and monitoring pricing.
  • Ensure storage areas and walk-ins are organized and stocked, setting standards by example.
  • Follow procedures for kitchen opening and closing.
  • Support training, scheduling, supervision, and discipline of kitchen staff to maintain morale and productivity.
  • Promote compliance with employee policies and safety regulations.
  • Maintain cleanliness and safety in work areas, practicing safe and sanitary food handling.
  • Report incidents, injuries, and hazards promptly.

Work Skills & Position Requirements:

  • Effective communication skills, both verbal and written.
  • Basic computer skills, including MS Office.
  • Decision-making skills related to profitability, service, waste control, and safety.
  • Strong coaching and personnel development abilities.
  • Flexible schedule and adaptability to guest and staff needs.
  • Professional appearance and self-motivation.
  • High school diploma required; college or culinary apprenticeship preferred.
  • Minimum 2 years of managerial kitchen experience.
  • Valid CA Food Handler Card within 30 days of hire.
  • Valid driver’s license with a clean record.
  • Availability to work weekends and holidays.
  • Physical ability to stand, walk, lift up to 50 lbs, and work in varying temperatures.
