Job summary

Performance Food Group in West Salem, WI is seeking a Meat Cutter to join our production team. You will portion cut meats and seafood to order, maintain safety and quality standards, and work Monday through Friday with a 6am to 7am start.

Qualifications

• Education: High school diploma or GED.
• Experience: 1+ year Meat Cutter Experience or butcher, chef or Culinary/knife skills experience.
• Skills: Knowledge of portion control practices and be familiar with the various cuts and types of meat products.
• Careers require standing 8–10 hours; lifting up to 60 pounds; repetitive use of upper extremities; ability to work in damp/cool environment; pass post-offer drug test and background check.

Responsibilities

• Review work schedule, perform safety checks on equipment, obtain supplies required to perform the work and prepare for operations.
• Check cutting list and obtain stock from coolers, open cases and dispose of trash properly.
• Cut various size portions of raw meat/seafood by hand with knives using proper cutting techniques.
• Clean and sanitize knives and tools; abide by USDA regulations and standards.
• Cut portions of meat/seafood using band saw or slicer; check weights and place portions into tubs.
• Remove totes and tubs of scrap for pickup area.
• Assist Packers and Sanitizers as required.
• Perform general housekeeping duties and maintain safety and quality standards.
• Performs other related duties as assigned.
