SIHAMCO is seeking a skilled Grill Chef de Partie (CDP) with a strong background in Mediterranean cuisine. You will manage the grill station, ensuring consistency, flavor, and quality across grilled meats, kebabs, and vegetables.

Qualifications

• 4+ years as a Grill CDP or Demi CDP in a professional kitchen focusing on Mediterranean cuisine.
• Strong knowledge of Mediterranean ingredients, spices and marination.
• Proficient cooking meats to varying doneness while retaining moisture and flavor.
• Experience with traditional equipment such as charcoal grill or rotisserie.
• Ability to work under pressure in a fast-paced kitchen and adhere to safety standards (HACCP).

Responsibilities

• Prepare and cook Mediterranean grilled items.
• Marinate meats and seafood using authentic spice blends.
• Operate and maintain charcoal, gas, or wood-fired grills safely.
• Ensure all prep and presentation meet quality standards.
• Work with kitchen brigade to ensure smooth service during peak hours.
• Maintain cleanliness and organization of grill station.
• Monitor and manage stock, prep levels, and waste for grill.
• Assist in training commis chefs and junior staff.
• Uphold food safety and sanitation standards at all times.
