Job summary

Rixos Tersane Istanbul, part of the Accor group, is seeking a detail-oriented Cost Controller to join our Finance team and safeguard cost efficiency across F&B and operations.

You will monitor costs, analyze variances, and work closely with Purchasing, Store, Kitchen, and F&B to support accurate cost reporting and commercial success.

Qualifications

• Bachelor's degree in Finance, Accounting, Hospitality Management, or related field.
• Experience in cost control within hospitality; luxury hotel preferred.
• Strong knowledge of food and beverage cost control, inventory management, purchasing procedures, and stock reconciliation.
• Proficiency in hotel management systems, inventory management software, and POS systems.
• Advanced Excel and financial reporting skills.
• Strong analytical, numerical, and problem-solving abilities.
• Excellent English communication skills.

Responsibilities

• Monitor and control food, beverage, and other operating costs within budgets.
• Conduct cost analyses and investigate variances between actual costs, budgets, and consumption.
• Monitor purchasing prices, supplier invoices, goods receiving, stock movements, and inventory levels.
• Perform regular inventory counts and reconcile with system records.
• Review recipes, portion sizes, yields, and selling prices for accurate cost calculations.
• Monitor wastage, spoilage, and other cost-related transactions with proper documentation.
• Review requisitions, market lists, and stock requests per procedures.
• Collaborate with Purchasing, Receiving, Store, Kitchen, and F&B to strengthen cost controls.
• Prepare daily to monthly cost reports and analyses.
• Identify cost-saving opportunities and present improvements.
• Support month-end closing, inventories, and audits.

As part of our continued growth, we are looking for a detail-oriented, analytical, and proactive professional to join our Finance team as a "Cost Controller".

Monitor and control food, beverage, and other operational costs to ensure compliance with established budgets and cost standards.

Conduct regular cost analyses and investigate variances between actual costs, budgets, and theoretical consumption.

Monitor purchasing prices, supplier invoices, goods receiving, stock movements, and inventory levels to ensure accuracy and cost efficiency.

Conduct regular inventory counts and reconcile physical stock with system records, investigating and reporting discrepancies.

Review food and beverage recipes, portion sizes, yields, and selling prices to support accurate food cost and beverage cost calculations.

Monitor wastage, spoilage, complimentary items, staff meals, and other cost-related transactions, ensuring proper documentation and control.

Review purchase requisitions, market lists, and stock requests in line with established procedures and operational requirements.

Work closely with Purchasing, Receiving, Store, Kitchen, Food & Beverage, and other operational departments to strengthen cost control practices.

Prepare daily, weekly, and monthly cost reports, including food cost, beverage cost, inventory variances, and consumption analyses.

Monitor menu engineering data and product profitability, providing insights to support pricing and cost optimization decisions.

Ensure compliance with inventory management procedures, internal controls, and company policies.

Identify potential cost-saving opportunities and recommend improvements to minimize losses and maximize operational efficiency.

Support month-end closing activities, inventory reconciliations, and internal and external audits.

Prepare regular reports and present cost-related findings and recommendations to the Finance and operational management teams.

Bachelor's degree in Finance, Accounting, Hospitality Management, or a related field.

Previous experience in cost control within the hospitality industry, preferably in a luxury hotel environment.

Strong knowledge of food and beverage cost control, inventory management, purchasing procedures, and stock reconciliation.

Familiarity with hotel management systems, inventory management software, and POS systems.

Proficiency in Microsoft Excel and financial reporting tools.

Strong analytical, numerical, and problem-solving skills.

High attention to detail, accuracy, and a strong sense of responsibility.

Good command of written and spoken English.

Strong communication skills and the ability to work effectively with both Finance and operational teams.

Ability to meet deadlines, manage multiple priorities, and maintain accurate records in a fast-paced hospitality environment.
