Job summary

URBAN F&B PTE. LTD. in Singapore is seeking a skilled Japanese Sushi & Sashimi Chef to lead omakase experiences, ensuring precision in fish handling, knife work, and presentation.

You will specialize in sushi, sashimi, and charcoal grilling, curate seasonal omakase menus, and train junior staff while maintaining food safety and consistency. Schedule: six days a week, with Monday off; shifts 10:30 AM–2:30 PM and 5:30 PM–10:30 PM in Singapore.

Qualifications

• Proven experience as a Sushi Chef or in a similar role.
• Expertise in Japanese culinary techniques and ingredient handling.
• Strong attention to detail and commitment to quality.
• Ability to work efficiently in a fast-paced environment.
• Excellent communication skills and a team-oriented attitude.

Responsibilities

• Prepare and assemble sushi and sashimi using fresh, high-quality ingredients.
• Create a variety of sushi rolls, nigiri, sashimi, and other Japanese dishes, ensuring precision in presentation and taste.
• Operate and manage charcoal grilling equipment to prepare grilled items such as yakitori, and other traditional Japanese grilled dishes.
• Design and deliver omakase experiences showcasing seasonal ingredients and culinary artistry.
• Inspect and select high-quality seafood and other ingredients, ensuring freshness and authenticity.
• Maintain proper storage and handling procedures for all ingredients to ensure food safety and quality.
• Work closely with other kitchen staff to ensure smooth kitchen operations and timely service.
• Provide training and guidance to junior chefs and kitchen assistants on sushi preparation and presentation if required.
• Monitor and manage inventory levels of ingredients, ensuring timely ordering and replenishment.
• Maintain consistency in the preparation and presentation of all dishes.
