Job summary

Jigger & Pony Group in Singapore is seeking a Principal Bartender to lead day-to-day bar operations, ensure service standards, and inspire the bar team across our noted venues.

You will recruit, train and coach bartenders, manage inventory and rosters, maintain cleanliness and safety, and deliver exceptional hospitality with guests. This is a hands-on leadership role in a fast-paced hospitality group known for craft cocktails and top bars.

Qualifications

• Previous experience as a bartender with strong cocktail preparation and bar operations.
• Experience guiding, training or supervising team members; senior bartender or leadership role advantageous.
• Good knowledge of spirits, cocktails, beverage preparation techniques and bar service standards.
• Strong organisational skills for inventory, rostering and daily operations.
• Genuine passion for hospitality and ability to connect with guests and build lasting relationships.
• Hands-on team player who leads by example and takes ownership of work.

Responsibilities

• Oversee Bar Operations - manage day-to-day bar operations, ensure smooth service, adequate staffing and consistent service standards.
• Lead and Develop the Team - hire, train, guide and orientate bartenders and part-timers; provide coaching and develop skills.
• Craft Quality Beverages - prepare alcoholic and non-alcoholic drinks to high standards, ensuring recipes and presentation are met.
• Deliver Exceptional Hospitality - engage guests, understand preferences and offer personalised recommendations to build loyalty.
• Manage Daily Operations and Inventory - oversee stock checks, ordering, storage and wastage control.
• Handle Rostering and Administration - manage staff rosters, leaves, attendance and related admin tasks.
• Maintain Cleanliness and Safety - keep bar/workstations/glassware clean and safely maintained.
• Uphold Service Standards - ensure adherence to procedures and beverage methods; identify gaps and improve efficiency.
• Build a Strong Team Culture - foster a supportive, respectful environment and collaborate with the wider team.
• Perform other related duties as required to support smooth bar operations.
