Job summary

voco Riyadh is seeking an Assistant Chief Steward to support daily stewarding operations in a premium hotel environment. You will supervise a diverse team, ensuring kitchens and back-of-house areas meet strict cleanliness and hygiene standards while coordinating with culinary and other departments to resolve issues.

The role emphasizes staff training, safety, and adherence to HACCP and IHG brand standards, with flexible shifts including weekends and holidays.

Qualifications

• 2–3 years stewarding experience, preferably in an international hotel
• Experience supervising and developing a diverse team
• Good knowledge of food safety, hygiene, HACCP, cleaning procedures and chemical handling
• Familiarity with IHG brand standards is an advantage
• Food Safety / HACCP certification is a plus

Responsibilities

• Assist the Chief Steward in daily stewarding operations
• Supervise stewarding team to ensure smooth operations
• Maintain kitchens and back-of-house areas to required cleanliness and hygiene standards
• Monitor cleaning of equipment, utensils, crockery and other operating items
• Ensure proper handling, storage and maintenance of chemicals and cleaning equipment
• Conduct regular inspections of kitchens and stewarding areas
• Coordinate with Culinary, F&B, Engineering and other departments to resolve issues
• Prepare duty rosters and allocate daily tasks to stewarding colleagues
• Train and coach stewarding colleagues on cleaning procedures, hygiene standards and safe working practices
• Ensure colleagues follow health, safety and personal hygiene standards
• Monitor waste segregation and disposal procedures
• Report equipment defects and safety concerns to the Chief Steward
• Maintain records, checklists and cleaning schedules
• Support inspections related to hygiene, food safety and brand standards
• Ensure adequate stewarding coverage during busy operations, events and banquets
• Promote teamwork, discipline and a positive work environment

Key Responsibilities:

• Assist the Chief Steward in managing the daily operations of the Stewarding Department.
• Supervise and coordinate the stewarding team to ensure smooth and efficient operations.
• Ensure all kitchens, back-of-house areas, equipment, utensils, and operating areas are maintained to the required cleanliness and hygiene standards.
• Monitor the cleaning and sanitization of kitchen equipment, utensils, crockery, cutlery, and other operating items.
• Ensure proper handling, storage, and maintenance of chemicals and cleaning equipment.
• Conduct regular inspections of kitchens, stewarding areas, garbage rooms, and back-of-house facilities.
• Ensure compliance with IHG/voco brand standards, HACCP, food safety, health, and hygiene requirements.
• Assist with controlling stewarding supplies, chemicals, equipment, and operating inventory.
• Monitor proper waste segregation and disposal procedures.
• Prepare duty rosters and allocate daily tasks to stewarding colleagues when required.
• Train, coach, and guide stewarding colleagues on cleaning procedures, hygiene standards, and safe working practices.
• Ensure all colleagues follow appropriate health, safety, and personal hygiene standards.
• Coordinate with Culinary, F&B, Engineering, and other departments to resolve operational issues.
• Report equipment defects, maintenance requirements, and safety concerns to the Chief Steward.
• Assist in maintaining accurate records, checklists, and cleaning schedules.
• Support the Chief Steward during internal and external hygiene, food safety, and brand-standard inspections.
• Ensure adequate stewarding coverage during busy operations, events, and banquets.
• Promote teamwork, discipline, and a positive working environment within the department.

Key Requirements

• Previous experience as an Assistant Chief Steward, Stewarding Supervisor, or Senior Steward in a 4- or 5-star hotel.
• Minimum 2–3 years of relevant stewarding experience, preferably within an international hotel environment.
• Good knowledge of food safety, hygiene, HACCP, cleaning procedures, and chemical handling.
• Strong understanding of kitchen and back-of-house cleanliness standards.
• Experience supervising and developing a diverse team.
• Good communication and interpersonal skills.
• Strong organizational and problem-solving abilities.
• Ability to work under pressure and manage priorities during busy operations.
• Good knowledge of stewarding equipment, chemicals, and cleaning methods.
• Familiarity with IHG brand standards is an advantage.
• Food Safety / HACCP certification will be an advantage.
• Ability to work flexible shifts, including weekends and public holidays.
