Job summary

SLS The Red Sea, on the Red Sea coast of Saudi Arabia, invites applications for an Assistant Chief Steward to support the stewarding operation, uphold top cleanliness standards, and ensure efficient back-of-house performance.

Working with the Chief Steward and culinary leadership, you will lead the stewarding team, oversee daily operations, and maintain equipment, utensils, and facilities to the high standards expected at SLS.

Qualifications

• Minimum 2–3 years of stewarding experience in luxury hotel or upscale hospitality.
• Prior supervisory or team-leading experience preferred.
• Strong knowledge of sanitation, hygiene, HACCP, and food safety.
• Experience with commercial kitchen equipment and dishwashing systems.
• Able to supervise, motivate, and support a diverse team in a fast-paced environment.
• Excellent organizational and communication skills.

Job Description

At SLS The Red Sea, every exceptional dining experience is supported by a seamless operation behind the scenes. As an Assistant Chief Steward, you will play a key role in supporting the stewarding operation and ensuring the highest standards of cleanliness, hygiene, organization, and efficiency across our culinary and food service areas.

Working closely with the Chief Steward and culinary leadership, you will assist in leading the stewarding team, coordinating daily operations, and ensuring that all kitchens, equipment, utensils, and back-of-house areas are maintained to the high standards expected at SLS.

Your hands‑on approach, attention to detail, and ability to support and motivate the team will contribute to a safe, efficient, and well‑organized environment that enables our culinary teams to deliver exceptional dining experiences.

Key Responsibilities

• Support the Chief Steward in coordinating daily stewarding operations and ensuring smooth workflow across all assigned areas.
• Supervise stewarding colleagues during daily operations, ensuring tasks are completed efficiently and in accordance with established standards.
• Ensure kitchens, back‑of‑house areas, equipment, utensils, and dishwashing areas are maintained to a consistently high standard of cleanliness and sanitation.
• Monitor the correct use, cleaning, and handling of kitchen equipment, utensils, dishwashing machines, and stewarding tools.
• Assist with daily staff allocation, task assignments, and operational coverage based on business requirements.
• Monitor the availability and appropriate use of cleaning chemicals, supplies, and stewarding equipment, reporting shortages or issues promptly.
• Support proper waste segregation, disposal, and recycling practices in line with hotel standards and sustainability initiatives.
• Conduct regular checks of operational areas to ensure cleanliness, organization, safety, and readiness throughout the day.
• Support the implementation of HACCP, food safety, hygiene, sanitation, and occupational health and safety standards.
• Assist in training, coaching, and guiding stewarding team members to maintain consistent operational and cleanliness standards.
• Promote teamwork, discipline, accountability, and a positive working environment within the stewarding team.
• Communicate operational requirements clearly and address day‑to‑day issues promptly, escalating matters to the Chief Steward when required.
• Work closely with the culinary and F&B teams to ensure their operational needs are supported efficiently and professionally.
• Assist in maintaining readiness for internal inspections, audits, and health and safety checks.
• Maintain a visible presence during busy operational periods and provide hands‑on support to the team when required.
• Step in for the Chief Steward in their absence, ensuring continuity of daily stewarding operations and maintaining established standards.

Qualifications

• Minimum of 2–3 years of relevant stewarding experience, ideally within a 5-star hotel, luxury resort, or upscale hospitality environment.
• Previous supervisory or team‑leading experience within a stewarding or kitchen environment is preferred.
• Good knowledge of sanitation standards, hygiene practices, food safety requirements, and HACCP principles.
• Familiarity with commercial kitchen equipment, dishwashing systems, cleaning procedures, and stewarding operations.
• Ability to supervise, motivate, and support a diverse team in a fast‑paced hospitality environment.
• Strong organizational, communication, teamwork, and time‑management skills.
• Basic computer literacy and the ability to follow operational procedures and maintain basic records.
• Strong attention to detail and a proactive approach to cleanliness, safety, and operational standards.
