Mandarin Oriental Manila is recruiting a Chef de Partie – Cake / Wedding Cake Artist for its upcoming luxury Pastry Kitchen. You will design, craft, and decorate wedding and celebration cakes, turning concepts into edible artistry in a pre-opening environment.

Collaborating with the Pastry and Events teams, you will mentor junior pastry colleagues, ensure top-quality finishes, maintain hygiene and cost control, and contribute to recipe development and equipment testing.

Qualificações

• Proven experience as Wedding Cake Artist, Cake Decorator or similar in luxury hospitality.
• Strong portfolio of wedding and celebration cakes with intricate decorations.
• Expert knowledge of cake decorating techniques and finishing.

Responsabilidades

• Design, prepare, assemble, and decorate bespoke wedding cakes and celebration cakes to high standards.
• Create fondant, piping, sugar flowers, and decorative finishes.
• Work with Executive Pastry Chef to develop creative cake concepts for weddings.
• Collaborate with Events and Banquet teams for timelines and specifications.
• Ensure consistency in taste, texture, finishing and presentation.
• Oversee preparation, assembly, storage, transport and final setup of wedding cakes.
• Mentor Commis Chefs and junior pastry colleagues.
• Maintain mise en place, stock levels, rotation, and minimize waste.
• Ensure high standards of hygiene, cleanliness and safety.
• Contribute to pre-opening tasks including equipment testing and recipe development.
