Bites To Go is seeking a Stewarding Team Leader to oversee all stewarding operations in the commissary and production kitchen. You will own daily and weekly cleaning programs, ensure hygiene and safety standards, and drive efficiency and team development in a fast-paced environment.
You will act as the primary decision-maker for the stewarding section, supervise staff in dishwashing and waste management, and ensure compliance with HACCP and RA 9003 in daily activities.
The Stewarding Team Leader is responsible for leading, supervising, and executing all stewarding operations in the commissary and production kitchen. This role takes full ownership of planning and implementing daily and weekly cleaning and sanitation programs, ensuring that all kitchen areas, equipment, and utensils meet the highest standards of hygiene and food safety. The Stewarding Team Leader serves as the key link between operations management and the stewarding team, driving efficiency, compliance, and team development in a fast-paced, high-volume production environment.
Act as the primary decision-maker and overall head of the stewarding section
Lead, supervise, and support all stewarding staff in dishwashing, waste management, and general cleaning operations
Assign daily duties and monitor staff performance to ensure efficiency and proper task execution
Conduct regular coaching, skills training, and performance feedback sessions to develop and maintain team standards
Monitor team attendance and punctuality; elevate recurring issues to the Production Manager
Plan, implement, and monitor daily and weekly cleaning and sanitation schedules for all kitchen, production, and commissary areas
Ensure all kitchen utensils, equipment, and work areas are cleaned, sanitized, and operationally ready before and after each production shift
Implement and enforce hygiene, sanitation, and safety standards in compliance with company policies, HACCP principles, and applicable regulatory requirements
Monitor and maintain adequate stock of cleaning supplies, tools, and chemical inventory; submit timely requisitions to prevent shortages
Oversee proper waste segregation and disposal practices in compliance with RA 9003 (Ecological Solid Waste Management Act)
Valid health certificate and compliance with food handler hygiene requirements
Knowledge of HACCP principles and food safety standards
Experience in stewarding, kitchen operations, or food production environments
Ability to lead and supervise teams
Understanding of chemical safety, proper dilution, and hazardous substance handling
