Job summary

Principalia Management & Personnel Consultants Inc. is seeking a skilled pizza cook to prepare various doughs and toppings for multiple pizza styles. You will manage fermentation, shaping and proofing, and operate a range of ovens to deliver Neapolitan, New York, Detroit, Roman and other specialty pizzas.

The role involves adjusting temperatures and times to achieve the desired crust and presentation while ensuring consistency and quality across all menu offerings.

Responsibilities

• Prepare pizza dough according to recipes and techniques, including dough mixing, kneading, fermentation, proofing, portioning, shaping, and storage.
• Prepare and assemble sauces, cheeses, meats, vegetables, herbs, and toppings; select dough preparation and baking methods for each style.
• Bake Neapolitan, New York, Detroit, Roman, Sicilian, sourdough and other specialty pizzas using wood-fired, gas, electric, deck, conveyor and other ovens.
• Adjust oven temperature and cooking times to ensure crust thickness, browning and presentation meet style requirements.

• Prepare different types of pizza dough according to specific recipes and techniques. Handle dough mixing, kneading, fermentation, proofing, portioning, shaping, and storage. Prepare and maintain sourdough starters when required.
• Prepare pizza sauces, cheeses, meats, vegetables, herbs, and other toppings. Select appropriate dough preparation and baking techniques for each pizza style. Shape and stretch pizza dough according to the required style and specifications.
• Prepare and bake Neapolitan, New York, Detroit, Roman, Sicilian, sourdough, and other specialty pizzas. Operate wood-fired, gas, electric, deck, conveyor, and other commercial pizza ovens.
• Adjust oven temperature, baking time, and cooking methods according to pizza style. Ensure proper crust thickness, texture, browning, toppings, and overall presentation.
