Responsibilities

• Prepare sourdough pizza dough using flour, water, sourdough starter, and other approved ingredients. Maintain and feed sourdough starters according to established schedules and recipes
• Monitor dough hydration, temperature, fermentation, and proofing times. Measure and weigh ingredients accurately to maintain consistent dough quality. Divide, portion, shape, and store dough properly.
• Monitor long fermentation and cold-proofing processes when required. Hand-stretch and shape pizza dough without damaging its structure. Prepare sauces, cheeses, meats, vegetables, herbs, and other pizza toppings
• Assemble pizzas according to recipes, customer orders, and presentation standards. Operate and monitor wood-fired, gas, electric, or high-temperature pizza ovens
