Job summary

Mandarin Oriental in Manila is seeking an Outlet Manager for its upcoming luxury hotel set to open in 2026. Mandarin Oriental, Makati – Outlet Manager

Mandarin Oriental is an award‑winning hotel operator. The upcoming 5‑star luxury hotel set within the Ayala Triangle Gardens will open in 2026. The hotel will feature 276 guestrooms and suites, world‑class amenities, restaurants, bar, pool and spa.

The Role

The Outlet Manager is responsible for the pre‑opening preparation, launch and ongoing operation of the assigned food and beverage outlet. The role ensures exceptional guest experiences, operational excellence, financial performance and alignment with Mandarin Oriental’s service philosophy. The manager leads, trains and inspires the outlet team while working closely with the Food & Beverage Manager and the pre‑opening task force.

Key Responsibilities
Pre‑Opening Responsibilities
  • Lead all pre‑opening activities for the assigned outlet including outlet setup, layout validation and operational readiness.
  • Develop SOPs, service sequences and training materials in line with Mandarin Oriental standards.
  • Recruit, onboard and train outlet colleagues.
  • Participate in menu engineering, wine & beverage selection and pricing strategies in collaboration with Culinary, Finance and the F&B Manager.
  • Support procurement, inventory setup and par level definition for all supplies and equipment.
  • Conduct mock services, soft openings and service rehearsals to ensure flawless opening execution.
Operations & Guest Experience
  • Oversee daily operations, ensuring highest levels of service quality, cleanliness and presentation.
  • Engage with guests personally, anticipating needs, resolving concerns swiftly and creating memorable experiences.
  • Ensure consistent adherence to brand standards, service rituals and Forbes/LQA quality benchmarks.
  • Maintain strong product knowledge of food, beverages, promotions and outlet concepts.
Leadership & People Management
  • Lead by example, fostering a culture of excellence, trust and genuine care.
  • Schedule, supervise, coach and evaluate outlet colleagues for optimal performance and engagement.
  • Conduct regular training, performance conversations and talent development discussions.
  • Promote teamwork, accountability and compliance with hotel policies and code of conduct.
Financial & Administrative Control
  • Manage outlet revenue, costs and profitability in line with departmental budgets and KPIs.
  • Monitor daily sales, labor costs and operating expenses and implement corrective actions as needed.
  • Ensure accurate cash handling, POS usage, inventory control and stock reconciliation.
  • Prepare operational reports and forecasts as required by the F&B Manager.
Health, Safety & Compliance
  • Ensure full compliance with food safety, hygiene, sanitation and local regulatory requirements.
  • Implement and monitor health & safety standards during pre‑opening and daily operations.
  • Conduct regular outlet inspections and risk assessments.
Qualifications & Experience
  • Bachelor’s degree or diploma in Hospitality Management or related field preferred.
  • Minimum 2–3 years of experience in food and beverage operations within a luxury or five‑star hotel.
  • Prior pre‑opening experience highly desirable.
  • Proven leadership experience managing diverse service teams.
  • Strong financial acumen with budgeting, cost control and inventory management experience.
  • Excellent communication skills in English; additional languages are an advantage.
