Prep & Setup (Mise en Place)
- Prepare ingredients: Wash, chop, and portion vegetables, meats, and seafood before service.
- Stock stations: Ensure all necessary sauces, spices, and cooking utensils are available and filled.
- Check inventory: Monitor stock levels and alert the Chef when items are low.
- Equipment checks: Ensure ovens, grills, and fryers are at the correct temperature.
Cooking & Service
- Cook to order: Prepare menu items accurately according to recipes and specific customer requests (e.g., steak temperatures).
- Manage timing: Coordinate with other cooks to ensure all dishes for a table are ready simultaneously.
- Plate presentation: Garnish and arrange food according to the restaurant’s visual standards.
- Communicate: Call out orders and coordinate clearly with the Head Chef or Expediter.
Sanitation & Safety
- Maintain cleanliness: Keep the workstation sanitized and clutter-free throughout the shift.
- Food safety: Follow proper storage rules (FIFO - First In, First Out), label/date all products, and monitor holding temperatures.
- End-of-shift closing: Deep clean grills, scrub floors, and properly store leftover food.
