Job summary

Mandarin Oriental Makati invites a skilled Chef de Partie - Chinese Wok Chef to join its pre-opening team. You will oversee wok production across all outlets, ensuring authenticity, precise fire control and premium presentation.

The ideal candidate has 6–10 years in luxury hospitality, with at least 3 years in a supervisory Chinese kitchen and a Diploma in Culinary Arts. You will mentor junior wok cooks while upholding HACCP and safety standards for world-class dining.

Qualifications

• Certification or Diploma in Culinary Arts or related field.
• 6–10 years of experience in high‑end hospitality or luxury hotel environments.
• At least 3 years in a supervisory role within a Chinese kitchen.

Responsibilities

• Oversee wok production across the property, ensuring consistency in taste, aroma and presentation.
• Lead and develop junior wok cooks and commis chefs.
• Maintain freshness, HACCP, hygiene and safety standards at all times.
• Ensure dishes meet luxury presentation standards for à la carte and banquets.
• Utilize authentic Cantonese wok techniques while adapting to luxury dining expectations.
