Job summary

Mandarin Oriental Makati invites a seasoned Chinese Wok Chef to lead wok production with a focus on authentic Cantonese techniques. You will mentor junior wok cooks, maintain high standards of freshness, and deliver premium Chinese dishes across all outlets during a pre-opening phase.

The role demands precision, leadership, and the ability to thrive in a fast-paced luxury environment while upholding HACCP and safety practices.

Qualifications

• Certification or Diploma in Culinary Arts or related field.
• Minimum 6–10 years of experience in high-end hospitality or luxury hotel environments.
• At least 3 years in a supervisory role within a Chinese kitchen, preferably wok-focused.
• Proven expertise in Cantonese and regional Chinese wok techniques.
• Experience handling premium seafood, meats, and specialty ingredients.
• Strong leadership skills and ability to mentor a diverse kitchen team.

Responsibilities

• Oversee the full production of all wok-fired dishes across the property, ensuring consistency in taste, aroma, texture, and presentation.
• Execute a wide range of wok dishes including stir-frys, claypot dishes, sauces, vegetables, seafood, and premium proteins.
• Maintain authentic wok techniques while meeting luxury dining expectations.
• Control fire, heat, and timing to ensure peak quality during service.
• Ensure mise en place is prepared fresh daily and rotated according to business levels.
• Maintain inventory records and enforce HACCP, hygiene and safety practices.
