Job summary

Mandarin Oriental Manila, a pre-opening luxury hotel, seeks an experienced Chef de Partie – 2nd Chinese Wok Chef to support the Chinese cuisine brigade across venues. You will execute wok-fired dishes, uphold authenticity, and contribute to guest satisfaction in a high-end setting.

The role requires 6–10 years in a Chinese kitchen, Cantonese knowledge, leadership ability to guide junior cooks, and a commitment to HACCP and luxury service standards.

Qualifications

• Certificate or Diploma in Culinary Arts or related field.
• Minimum 6–10 years in a Chinese kitchen.
• Experience in a luxury hotel or fine dining environment is preferred.

Responsibilities

• Prepare and execute wok-fired dishes according to established recipes and standards.
• Assist in production of a wide range of Chinese dishes including stir-fries, seafood, and premium meats.
• Apply authentic wok cooking techniques while maintaining consistency during service.
• Maintain mise en place and ensure timely, high-quality food production.
• Support training of junior kitchen colleagues and coordinate with other kitchen sections.
