Mandarin Oriental Makati is preparing to open as a 5-star luxury hotel in Manila, delivering curated Chinese cuisine across its venues. The Chef de Partie - 3rd Chinese Wok Chef will support daily wok operations, ensure authenticity, and uphold rigorous standards within a high-volume setting.

The role emphasizes strong wok skills, attention to detail, teamwork, and a commitment to delivering exceptional dining experiences in Mandarin Oriental's renowned luxury hospitality environment.

Qualifications

• Good knowledge of Chinese wok cooking techniques and stir-fry preparation.
• Understanding of authentic Chinese ingredients, sauces, seasonings, and methods.
• Ability to maintain quality and consistency during high-volume service.
• Strong organizational and time-management skills.

Responsibilities

• Prepare and cook wok-fired dishes according to established recipes and portion standards.
• Support the wok station across breakfast, lunch, dinner, banquets and events.
• Maintain mise en place and ensure timely, high-quality service.
• Follow HACCP, hygiene and sanitation standards and proper storage.
• Collaborate with senior chefs and other kitchen sections to ensure smooth operations.
