The Hygiene Specialist is responsible for maintaining and monitoring the highest standards of hygiene, sanitation, and food safety throughout the resort and casino property. This role ensures compliance with local health regulations, company policies, and international food safety standards to protect guests, employees, and the organization's reputation.
Key Responsibilities
Food Safety & Hygiene management
- Implement and maintain food safety Management systems, including HACCP and sanitation programs.
- Ensure all food served to guests and employees is free from microbiological, chemical, and physical contamination.
- Monitor food handling, preparation, storage, transpotation, and service practices.
- Verify proper temperature controls, food labeling, and stock rotation (FIFO/FEFO).
Audits & Inspections
- Conduct regular hygiene and sanitation inspections of:
- - Kitchens
- - Restaurants
- - Bars
- - Banquet Operations
- - Employee Dining Facilities
- - Food Storage and Reciving Areas
- Perform internal food safety audits and prepare detailed audit reports.
- Monitor corrective and preventive actions arising from audit findings.
Training & Awareness
- Conduct food safety and hygiene training programs for:
- - Kitchen Staff
- - Service Staff
- - Stewarding
- - Housekeeping
- - Receiving Personnel
- Promote a culture of food safety and personal hygiene.
- Maintain records of employee food safety certifications and training.
Regulatory Compliance
- Ensure compliance with:
- - Philippine Food Safety Act (RA. 10611)
- - Local Government Health Regulations
- - Department of Health Regulations
- - Sanitation Code of the Philippines
- - HACCP requirements
- Coordinate with government inspectors and external auditors.
- Prepare documentation required for inspection and audits.
Pest Control & Sanitation
- Monitor pest control programs and ensure corrective actions are implemented.
- Verify cleaning and sanitation schedules are followed.
- Conduct environmental hygiene assessments in food preparation and storage areas.
Documentation & Reporting
- Maintain food safety records, audit reports, temperature logs, sanitation checklists, and incident reports.
- Analyze trends and recommend improvements to management.
- Prepare monthly hygiene and food safety performance report.
Qualifications
- Bachelor's degree in:
- - Food Technology

- - Nutrition and Dietetics

- - Hotel & restaurant management or related field
- Certification in HACCP is required.
- Minimum 2–3 years of experience in hygiene, food safety, quality assurance, or sanitation, within a resort, casino, hotel, or food service operation.
- Knowledge of food safety regulations, sanitation standards, and health codes.
- ISO 22000, Food safety management System (FSMS), or related certifications are an advantage.
