Job summary

Bioessence Group of Companies seeks a Commissary Manager to oversee our food production, inventory, quality control, manpower, and daily commissary operations. You will lead teams, improve processes, and ensure high standards for product quality and safety across branches.

Ideal candidates have experience in commissary or central kitchen environments, strong leadership, and a track record of cost control and efficiency.

Qualifications

  • Bachelor's degree in a related field (Food Technology, Culinary Arts, Hospitality Management, Operations Management, or related).
  • Proven experience in commissary operations, central kitchen, food production, restaurant operations, or similar environment.
  • Prior supervisory/managerial experience preferred.

Responsibilities

  • Oversee day-to-day commissary operations: food prep, production, packaging, storage and distribution.
  • Plan and monitor production schedules based on branch requirements and inventory levels.
  • Ensure products follow standardized recipes, specs, portions, and quality standards.
  • Supervise commissary staff: scheduling, training, coaching, performance monitoring.
  • Monitor inventory of raw materials, packaging, and finished goods to minimize waste.
  • Ensure FIFO/FEFO handling, labeling, storage and good receiving practices.
  • Maintain compliance with food safety, sanitation, and company standards.
  • Conduct regular quality checks for freshness and portion control.
  • Monitor food costs, labor costs, yields, wastage, and expenses.
  • Identify improvements to productivity and cost reduction; streamline processes.
  • Coordinate with Purchasing, Operations, QA, Logistics and branches for smooth production and distribution.
  • Monitor equipment and facilities; coordinate preventive maintenance and repairs.
  • Prepare and submit operational, inventory, production, and performance reports.
  • Address issues promptly and implement corrective actions.

Key Responsibilities
  • Oversee the day-to-day operations of the commissary, including food preparation, production, packaging, storage, and distribution.
  • Plan and monitor production schedules based on branch requirements, demand forecasts, and inventory levels.
  • Ensure all products are prepared according to standardized recipes, specifications, portion sizes, and quality standards.
  • Manage and supervise commissary staff, including scheduling, task assignments, training, coaching, and performance monitoring.
  • Monitor inventory levels of raw materials, packaging supplies, and finished products to ensure availability and minimize wastage.
  • Ensure proper receiving, storage, handling, labeling, and rotation of ingredients and products following FIFO/FEFO practices.
  • Maintain strict compliance with food safety, sanitation, hygiene, and company standards.
  • Conduct regular quality checks to ensure consistency, freshness, proper portioning, and overall product quality.
  • Monitor food costs, labor costs, production yields, wastage, and other operational expenses.
  • Identify opportunities to improve productivity, reduce costs, minimize waste, and streamline commissary processes.
  • Coordinate with Purchasing, Operations, Quality Assurance, Logistics, and branch teams to ensure smooth production and timely distribution.
  • Monitor equipment and facility conditions and coordinate preventive maintenance and repairs when necessary.
  • Prepare and submit operational, inventory, production, and performance reports.
  • Address operational issues, product concerns, and branch feedback promptly and implement appropriate corrective actions.
What We're Looking For
  • Bachelor's degree in Food Technology, Culinary Arts, Hospitality Management, Operations Management, Business Administration, or a related field.
  • Proven experience in commissary operations, central kitchen, food production, restaurant operations, or a similar environment.
  • Previous experience in a supervisory or managerial position is preferred.
  • Strong knowledge of food production, inventory management, food costing, quality control, and food safety.
  • Knowledge of HACCP, GMP, sanitation, and proper food handling practices is an advantage.
  • Strong leadership, communication, organizational, and problem-solving skills.
  • Excellent ability to manage people, processes, and multiple operational priorities.
  • Detail-oriented with a strong commitment to quality, consistency, and efficiency.
  • Proficient in Microsoft Office or Google Workspace; knowledge of inventory or production management systems is an advantage.
  • Willingness to work in a fast-paced environment and travel between branches or facilities when required.
