Araw Hospitality Group AHG at El Nido, Palawan, is seeking an experienced Food & Beverage Manager to lead all dining operations across the resort, including restaurants, bars, and in-villa dining, while upholding discreet luxury and personalized service.
You will drive service excellence, financial performance, and rigorous food safety standards, collaborating with the Executive Chef and resort leadership to create memorable guest experiences and sustainable profitability.
The Food & Beverage Manager is responsible for leading all Food & Beverage operations across the resort, ensuring exceptional guest experiences that reflect Lihim Resorts' commitment to discreet luxury and personalized service. This role oversees restaurant, bar, and in-villa dining operations while driving service excellence, financial performance, team development, food safety, and operational efficiency. Working closely with the Executive Chef and other operational leaders, the Food & Beverage Manager ensures every dining experience exceeds guest expectations while supporting the resort's business objectives.
Food & Beverage Operations
Oversee the day-to-day operations of all dining outlets, bars, and in-villa dining services.
Ensure all outlets are operationally ready through daily opening and closing procedures.
Conduct daily pre-shift briefings to align teams on service priorities, guest preferences, and operational updates.
Inspect dining areas to ensure cleanliness, ambiance, presentation, and service readiness.
Coordinate closely with Front Office, Housekeeping, Kitchen, and Guest Services to ensure seamless guest experiences.
Guest Experience & Service Excellence
Deliver exceptional dining experiences through personalized and attentive service.
Welcome VIP and returning guests while ensuring individual preferences and dietary requirements are consistently met.
Oversee the execution of bespoke dining experiences, including private dinners, beach dining, romantic setups, and special celebrations.
Ensure in-villa dining requests are delivered accurately, promptly, and to the highest service standards.
Monitor guest feedback and implement continuous service improvements.
Leadership & Team Development
Lead, motivate, and develop the Food & Beverage team to deliver exceptional hospitality.
Prepare staff schedules based on occupancy forecasts and operational requirements.
Conduct regular service training covering product knowledge, upselling, guest engagement, and service standards.
Monitor employee performance, provide coaching, and implement performance improvement initiatives when necessary.
Foster a culture of accountability, teamwork, and continuous learning.
Menu Development & Product Quality
Collaborate with the Executive Chef in developing seasonal menus, themed dining experiences, and innovative food and beverage offerings.
Conduct regular tasting sessions to ensure consistency in food quality, presentation, and beverage standards.
Monitor menu availability by coordinating with kitchen and bar teams to ensure adequate inventory levels.
Support menu engineering initiatives to maximize guest satisfaction and profitability.
Inventory, Purchasing & Cost Control
Manage inventory levels for food, beverages, operating supplies, linens, and guest amenities.
Prepare and review purchasing requisitions based on operational requirements.
Monitor consumption trends and maintain appropriate par stock levels.
Coordinate with suppliers to ensure product quality, timely deliveries, and proper storage standards.
Minimize waste, breakage, and product losses through effective inventory control measures.
Financial Performance
Monitor daily Food & Beverage revenue and operational performance.
Analyze sales reports to identify revenue trends and business opportunities.
Implement upselling and promotional initiatives to maximize average guest spend.
Manage departmental expenses while maintaining service quality and operational standards.
Support budgeting, forecasting, and profitability objectives for the department.
Food Safety & Regulatory Compliance
Ensure compliance with food safety regulations, sanitation standards, and HACCP requirements.
Conduct regular hygiene and sanitation inspections across all Food & Beverage outlets.
Maintain updated operating permits, food handling certifications, and compliance documentation.
Promote workplace safety and adherence to company health and sanitation policies.
Events & Special Functions
Coordinate Food & Beverage operations for weddings, private events, wellness retreats, and special functions.
Develop customized dining experiences and banquet packages to meet guest requirements.
Ensure flawless execution of event logistics, staffing, menus, timelines, and service delivery.
Collaborate with Sales, Events, and Guest Services to deliver memorable experiences.
Business Reporting & Communication
Prepare and submit operational and performance reports to Resort Management.
Participate in Heads of Department meetings and provide updates on operational performance, guest satisfaction, and business initiatives.
Maintain effective communication across departments to ensure operational excellence.
Recommend operational improvements based on guest feedback, performance metrics, and business trends.
Sustainability & Environmental Stewardship
Support the resort's sustainability initiatives by promoting responsible sourcing and environmentally friendly practices.
Prioritize locally sourced ingredients whenever possible to support local communities and reduce environmental impact.
Implement waste reduction initiatives, including food waste monitoring and sustainable packaging alternatives.
Promote environmentally responsible Food & Beverage operations aligned with the resort's sustainability goals.
Bachelor's degree in Hospitality Management, Hotel and Restaurant Management, Business Administration, or a related field.
At least 5 years of progressive Food & Beverage management experience, preferably within luxury hotels, resorts, or upscale hospitality establishments.
Strong knowledge of restaurant operations, food safety, HACCP standards, inventory management, menu engineering, and cost control.
Proven leadership experience in managing diverse Food & Beverage teams while maintaining high service standards.
Strong financial acumen with experience in budgeting, forecasting, revenue management, and profitability analysis.
Excellent guest relations, communication, interpersonal, and problem-solving skills.
Ability to thrive in a fast-paced, luxury hospitality environment while maintaining exceptional attention to detail.
Applicants must be residing in El Nido, Palawan, or willing to relocate to support on-site resort operations.
