Job summary

Mandarin Oriental Makati invites you to join a premium preopening Chinese Kitchen as Commis. You will assist in the preparation, cooking, and presentation of authentic Chinese cuisine while upholding high standards of hygiene and kitchen safety.

This role forms part of a luxury hotel's launch team in Manila. Ideal candidates have at least 1 year in Chinese cuisine or hotel food service; fresh graduates with training are welcome.

Qualifications

• Minimum 1 year of culinary experience in a Chinese restaurant, hotel, or similar food service establishment preferred.
• Fresh graduates with culinary training may be considered for entry-level positions.
• Basic knowledge of Chinese cooking techniques, ingredients, and food preparation methods.
• Understanding of food safety, sanitation, and HACCP principles.

Responsibilities

• Assist in the preparation and cooking of Chinese dishes in accordance with established recipes, portion controls, and presentation standards.
• Prepare ingredients including vegetables, meats, seafood, sauces, and condiments required for daily operations.
• Ensure all food items are stored, handled, and labeled properly following food safety and hygiene standards.
• Maintain cleanliness and organization of workstations, equipment, and kitchen areas at all times.
• Support senior chefs in mise en place preparation and daily kitchen operations.
• Monitor stock levels and promptly report shortages or quality concerns to the Chef de Partie or Sous Chef.
• Ensure proper use, care, and maintenance of kitchen equipment and utensils.
• Follow all safety, sanitation, and hotel policies and procedures.
• Assist in receiving and inspecting deliveries to ensure product quality and freshness.
• Minimize wastage and contribute to cost-control initiatives.
• Participate in training sessions and continuously develop culinary knowledge and skills in Chinese cuisine.
• Support colleagues and other kitchen sections as required to ensure smooth operations and exceptional guest satisfaction.
