Job summary

IHG Hotels & Resorts, Xin Tian Di Chinese Restaurant in Manila, is seeking a Chef de Partie (Chinese Cuisine) to oversee the daily operations of the Chinese kitchen section and ensure authentic, high-quality dishes in line with recipes and hotel standards.

You will work with the Executive Chinese Chef and culinary team to maintain consistency, efficiency, and guest satisfaction in a fast-paced environment and contribute to menu development and seasonal promotions.

Qualifications

• Diploma, vocational certification, or relevant qualification in Culinary Arts preferred.
• 2–3 years of professional culinary experience, preferably in Chinese cuisine in a hotel or restaurant.
• Strong knowledge of authentic Chinese cooking techniques, ingredients and presentation.
• Experience in Cantonese cuisine, wok cooking, dim sum or traditional Chinese specialties is an advantage.
• Solid understanding of food safety, kitchen hygiene and HACCP principles.
• Ability to supervise and guide junior kitchen colleagues with attention to detail.
• Well-organized with time-management skills for a fast-paced kitchen environment.
• Team-oriented with a passion for culinary excellence and guest satisfaction.
• Flexibility to work rotating shifts, weekends and public holidays.

Responsibilities

• Prepare, cook and present authentic Chinese dishes according to recipes and standards.
• Oversee daily operations of your kitchen section for smooth food preparation.
• Maintain consistency in food quality, taste, portions and presentation.
• Assist in preparing traditional Chinese specialties including stir-frried dishes, dim sum and roasted meats.
• Supervise and guide junior kitchen staff to ensure proper techniques and procedures.
• Monitor food preparation, storage and handling for safety and hygiene compliance.
• Ensure stock rotation, inventory control and efficient use of ingredients to minimize waste.
• Maintain cleanliness, organization and sanitation in your kitchen section.
• Coordinate with other kitchen sections and service team for timely guest orders.
• Assist with menu development, seasonal promotions and special culinary events.
• Monitor equipment and report maintenance concerns promptly.
• Follow HACCP and hotel hygiene requirements in daily operations.
• Support executive and sous chefs to uphold culinary excellence and efficiency.
