Qualifications

  • 5+ years experience in a 5-star+ hotel, cruise ship or high-profile restaurant performing the functions of a similar position.
  • 3+ years experience in a supervisory position, preferably in a multi-nationality setting with proven orientation and training capabilities.

Responsibilities

  • Direct, supervise and assist in the preparation of all bakery products made and served onboard in accordance with menus and recipes.
  • Directly involved in daily bakery activities while directing, supervising, assisting and training all bakery staff.
  • Responsible for performance, appearances, dress and conduct of all bakery staff; report objectively to the Executive Chef.

About the Company

Seabourn Baker Directs and supervises the activities of team members engaged in the preparation of bakery products for guests and crew following the guidelines and manuals established by the corporate office. The Baker is directly responsible to ensure the guest satisfaction of the food product in their outlet. They also ensure that staff is trained in order to provide the service necessary for the continued service we provide on board. The decisions made regarding food costs and waste management is imperative to the success of the company as well as team morale and support to the management.

About the Role

The Baker is responsible for overseeing the preparation of bakery products and ensuring guest satisfaction while managing team performance and training.

Responsibilities
  • Direct, supervise and assist in the preparation of all bakery products made and served on board in accordance with the Marine Hotel Department's menus and recipes.
  • Actively involved in daily bakery activities while directing, supervising, assisting and training all employees assigned to his bakery shop.
  • Responsible for the performance, appearances, dress and personal conduct, including time keeping of all employees assigned to the bakery shop and reports on these subjects objectively and timely to the Executive Chef.
  • Responsible for building and maintaining a team atmosphere in the department.
  • Prepares a daily schedule for all employees assigned to his bakery shop in accordance with the planned menu and recipes for the day. Follows prescribed hours set forth by Marine Hotel Department in order to achieve the highest level of quality and efficiency.
  • Responsible for the proper handling of equipment and utensils to prevent loss, damage or undue maintenance.
  • Reports any malfunctioning equipment to the Executive Chef.
  • Evaluate and rate, monthly, each member of the bakery brigade and report it objectively to the Executive Chef.
  • Responsible for controlling the bakery food cost by developing cost effective procedures and monitoring over production waste under the Executive Chef's supervision.
Qualifications

5+ years experience in a 5-star+ hotel, cruise ship or high-profile restaurant performing the functions of a similar position. 3+ years experience in a supervisory position preferably in a multi-nationality setting with a proven ability to provide orientation and training.

Required Skills

Proven ability to provide culinary supervision, training and delegation of at least 10 baker assistants. Experience in high volume operation of at least 500 meals per service.

Preferred Skills

Familiarity with and execution of the Seabourn HESS-MS appropriate to their position.
