Job summary

NIU by Vikings Group of Companies is seeking an experienced Chef de Partie specializing in Chinese cuisine to join our culinary team in Nuvali, Laguna. This full-time role requires leadership to manage a station, train junior staff, and ensure strict food safety standards.

You will craft authentic Chinese dishes, utilize wok and steaming techniques, and contribute to menu development while delivering high-quality, consistent results in a fast-paced kitchen.

Qualifications

• Minimum of 3-5 years' professional experience as a Chef de Partie or equivalent senior kitchen position.
• Strong knowledge of authentic Chinese cooking techniques, ingredients and traditional preparation methods.
• Advanced culinary skills with proficiency in wok cooking, steaming, stir-frying and other traditional Chinese cooking methods.
• Leadership and supervisory experience with the ability to train and mentor junior kitchen staff.
• Excellent understanding of food safety, hygiene regulations and HACCP principles.
• Creative mindset with the ability to develop new dishes and contribute to menu development.
• Ability to work under pressure and maintain consistency in a fast-paced hospitality environment.

Responsibilities

• Prepare and cook Chinese dishes according to established recipes, standards and presentation guidelines.
• Oversee and manage the assigned kitchen station, ensuring all equipment is properly maintained and organized.
• Train, supervise and mentor junior kitchen staff working within your station.
• Maintain strict adherence to food safety, hygiene and sanitation standards at all times.
• Control food costs and portion sizes whilst maintaining quality and consistency.
• Monitor stock levels and communicate ingredient requirements to ensure smooth kitchen operations.
• Collaborate with the head chef and other kitchen staff to ensure timely service during busy periods.
• Develop and suggest new dishes and menu innovations that align with Chinese culinary traditions.
• Ensure all dishes meet quality standards before they leave the kitchen.
• Maintain a clean, organized and efficient working environment within your station.
