Vikings Group of Companies is seeking a skilled and experienced Chef de Partie specializing in Chinese Cuisine to join our dynamic culinary team. This is a full-time position based in our Mandaluyong City, Metro Manila location. As Chef de Partie, you will take charge of a specific section of our kitchen, overseeing food preparation, maintaining quality standards, and leading a team of junior chefs. This role is pivotal to delivering authentic Chinese cuisine experiences that define the Vikings dining philosophy and meet our guests' expectations for excellence.
Oversee and manage the Chinese cuisine section, ensuring consistent quality, presentation and taste of all dishes prepared
Prepare and cook Chinese dishes following established recipes and culinary standards whilst maintaining food safety and hygiene protocols
Lead, mentor and supervise junior chefs and kitchen staff within your station, providing guidance and training on techniques and procedures
Monitor food costs and portion control to minimize waste and maintain profitability
Ensure all ingredients are fresh and properly stored; conduct regular inventory checks and communicate stock requirements to management
Collaborate with other sections and the Executive Chef to plan menus, develop new dishes and seasonal specials
Maintain a clean, organized and efficient kitchen station, adhering to all health and safety regulations
Respond promptly to service demands, managing workload during peak hours and ensuring timely food delivery
Train kitchen staff on food preparation techniques, plating standards and customer service excellence
Minimum 5 years of professional culinary experience, with substantial experience in Chinese cuisine preparation
Proven track record working as a Chef de Partie or similar senior kitchen position in a busy, high-volume restaurant or hotel environment
In-depth knowledge of traditional and contemporary Chinese cooking techniques, ingredients and flavour profiles
Strong leadership and team management skills with the ability to motivate and develop junior kitchen staff
Exceptional knife skills and food presentation expertise
Thorough understanding of food safety, sanitation standards and kitchen health regulations
Ability to work efficiently under pressure whilst maintaining quality standards during peak service periods
Strong communication skills and ability to collaborate effectively with kitchen and front-of-house teams
Flexibility to work varied shifts, including evenings, weekends and public holidays as required
Culinary qualification or recognised chef certification is preferred
Experience in a hospitality group or multi-concept restaurant environment is advantageous
