Responsibilities

• Assist the Baking and Pastry Head in supervising daily croissant and pastry production, ensuring alignment with established recipes, lamination benchmarks, and proofing schedules
• Assume full operational leadership of the kitchen floor during the Head Baker's absence or designated shifts
• Perform quality checks on batch prep, dough lamination, shaping, and baking to meet taste, texture, and aesthetic standards
• Supervise junior bakers and general workers, delegating daily prep and baking tasks to ensure optimal shift efficiency and product flow
• Assist with shift timekeeping, verify attendance logs, monitor punctuality, and report infractions to the Head Baker and HR
• Participate in onboarding, training, and skill-building for new kitchen hires, focusing on laminated doughs, safety procedures, and recipe compliance
• Coordinate cross-store dispatch prep and FOH & Hot Kitchen order fulfillment, verify counts, packaging standards, and dispatch timelines
• Monitor kitchen sanitation, deep-cleaning schedules, personal hygiene compliance, and allergen separation per food safety regulations
• Assist with ingredient inventory counts, track waste/spoilage, and ensure proper storage (FIFO)
• Maintain kitchen logs (temperature tracking, waste records, production yields) and report delays or equipment issues to management
