Responsibilities

  • Plan and develop menus, review recipes, estimate food, labour and supply requirements, and discuss issues.
  • Prepare, season, cook and present a range of Chinese cuisine using wok, steaming, roasting, braising and sauces.
  • Monitor quality, taste, portion size and presentation; take corrective action as needed.
  • Inspect ingredients to ensure quality, freshness and food safety standards.
  • Order food supplies, monitor stock levels and maintain ingredients to meet operations.
  • Coordinate and train cooks and kitchenhands, allocate duties and demonstrate cooking procedures.
  • Minimise food wastage and ensure proper storage and rotation.
  • Ensure compliance with safety and hygiene regulations.

A Chinese restaurant located in Auckland is seeking two experienced full-time Chinese Cuisine Chefs (minimum 30 hours per week) to join our dynamic kitchen team.

The Chinese Cuisine Chefs will be responsible for leading and coordinating daily food preparation and kitchen workflow, and for preparing, cooking and presenting Chinese cuisine to a high professional standard. They will work with the Restaurant Manager and kitchen team to plan and develop menus, review recipes, estimate food and supply requirements, maintain recipe and portion standards, control food quality, order food supplies, supervise and train kitchen staff, and ensure compliance with food safety, hygiene and workplace health and safety requirements.

Key tasks and responsibilities:

Lead and coordinate daily food preparation, kitchen workflow and food output to meet service requirements and customer demand.

Work with the Restaurant Manager and kitchen team to plan and develop menus, review recipes, estimate food, labour and supply requirements, and discuss food preparation and service issues.

Prepare, season, cook and present a range of Chinese cuisine using appropriate techniques, including wok cooking, steaming, roasting, braising and sauce preparation.

Monitor the quality, taste, portion size and presentation of dishes at all stages of preparation and service, and take corrective action when required.

Inspect ingredients and raw materials to ensure they meet required quality, freshness and food safety standards.

Order food supplies, monitor stock levels and maintain sufficient ingredients to meet operational requirements.

Coordinate, supervise and guide cooks and kitchenhands during food preparation and service, including allocating preparation duties, demonstrating cooking procedures and providing on-the-job training.

Minimise food wastage and ensure ingredients and prepared food are stored, labelled and rotated correctly.

Ensure compliance with food safety, hygiene and workplace health and safety requirements, and coordinate kitchen staff to ensure accurate and timely service.
