Job summary

Regent Kuala Lumpur is seeking a Chef De Cuisine to lead the rooftop kitchen, translating authentic Japanese technique into a fast-paced, high-energy bar setting. The role requires strong supervisory experience, a passion for precision, and a commitment to delivering exceptional guest experiences.

You will drive training, maintain high hygiene and safety standards, and collaborate with leadership to ensure consistency and quality across all dishes.

Qualifications

• Degree or Vocational Certificate required.
• 5–7 years' experience in a kitchen/supervisory role, with at least 4 years in a supervisory capacity.
• Genuine expertise in Japanese cuisine and culinary technique.
• Experience in high-volume, fast-paced kitchen environments, ideally within a bar or nightlife-driven F&B setting.

Responsibilities

• Establish and maintain effective employee and inter-departmental working relationships.
• Lead training plans and materials for the kitchen team, coordinating with senior leaders.
• Liaise with Engineering for preventive maintenance and repairs.
• Direct hands-on kitchen supervision ensuring policy and safety compliance.
• Oversee appearance and grooming standards of kitchen staff.
• Prepare and post weekly schedules reflecting business needs.
