Job summary

Mercure Kota Kinabalu City Centre seeks a Kitchen Support member to assist in daily hot kitchen operations and food preparation. You will work under senior chefs to maintain quality and service standards.

Responsibilities include mise en place, portioning, hygiene, safety, and teamwork to ensure meals are prepared efficiently and on time in a fast-paced hotel environment.

• Receive, store, label, and rotate stock; report shortages or damages.
• Assist in equipment cleaning and proper storage after use.
• Participate in on-the-job training to improve cooking skills.
• Collaborate with team to ensure meals are prepared and served on time.

Job description

• Food Preparation
  Assist in preparing and measuring ingredients, including meat, seafood, vegetables, and other food items according to kitchen requirements.
• Kitchen Operations
  Support daily hot kitchen operations by assisting with basic cooking, food preparation, and other assigned kitchen tasks under the supervision of senior chefs.
• Food Quality & Presentation
  Follow standard recipes and instructions to ensure food is prepared according to the hotel's quality, portion, and presentation standards.
• Kitchen Hygiene & Food Safety
  Maintain cleanliness and proper hygiene in the kitchen. Follow food safety, sanitation, and workplace safety procedures at all times.
• Culinary Team Support
  Assist the Chef de Partie, Commis 1, and senior chefs with daily food preparation, mise en place, and food service requirements.
• Stock Handling
  Assist in receiving, storing, labelling, and organizing kitchen ingredients. Ensure proper stock rotation and report any shortages or damaged items.
• Kitchen Equipment & Maintenance
  Ensure cooking equipment, utensils, and workstations are cleaned and properly stored after use.
• Training & Development
  Participate in on-the-job training to improve cooking skills, learn food preparation techniques, and gain knowledge of hot kitchen operations.
• Teamwork
  Work cooperatively with other kitchen team members to ensure food preparation and service are completed efficiently and on time.
