Job summary

Thomas Franks is seeking a Regional Executive Chef to join our Milan team. You will lead culinary operations across multiple locations, ensuring exceptional service and consistent food standards.

The ideal candidate has executive-level experience in contract catering or school sectors, with strong leadership, cost control and menu innovation. A right-to-work in Italy and compliance with hygiene policies are required.

Qualifications

• Experience in B&I contract catering or Independent School sector at Executive Head Chef/Executive Chef Manager/Development Chef level.
• Strong leadership, client relations and financial understanding.
• Ability to design seasonal menus with regional suppliers and ensure quality.
• Solid knowledge of food safety, hygiene and allergen controls.

Responsibilities

• Support mobilisations at new sites and locations.
• Troubleshoot at locations needing additional support.
• Deliver high-level hospitality and events for clients.
• Create bespoke seasonal menus from regional suppliers.
• Complete food costings and assist with cost control.
• Manage company bookwork and administrative duties.
• Ensure food standards are met and wastage is minimised.
• Adhere to Food Hygiene and Health & Safety policies and allergen procedures.

We are looking for a super talented Regional Executive Chef to join and support our growing team in Milan.

You will have worked within either the B&I contract catering sector or Independent School sector at Executive Head Chef, Executive Chef Manager or Development Chef level to be considered for this role.

Key responsibilities:

• To support with mobilisations
• To support with troubleshooting at locations which require additional support
• Supporting the business with high level hospitality and events
• Creating bespoke seasonal menus from regional and local suppliers
• Completing food costings as required
• Completing company bookwork
• Ensuring company food standards are adhered to and wastage controlled.
• Ensuring all Food Hygiene and Health & Safety policies and allergen control procedures are followed.
