Bramble Ski by Le Collectionist cerca uno Chalet Chef per offrire un’esperienza culinaria di alto livello nelle nostre luxury chalet alpini. Sarai responsabile di creare piatti raffinati, presentazioni impeccabili e di rispondere alle esigenze degli ospiti durante soggiorni esclusivi.

L’incarico è stagionale (43,5 ore settimanali) dal 27 novembre 2026 al 24 aprile 2027, in Austria. Collaborerai con il Chalet Manager e il team per pianificare menu, gestire approvvigionamenti, budget e igiene in

Mansioni

  • Assolvere tutti i compiti quotidiani da chef per garantire che le aspettative degli ospiti siano costantemente soddisfatte e superate, in linea con il pacchetto pubblicizzato e i processi aziendali.
  • Preparare colazione, tè pomeridiano, canapé e pasti serali raffinati secondo standard culinari elevati.
  • Occasionalmente preparare pasti aggiuntivi come pranzo o snack notturni previa accordo con il resort o la direzione centrale.
  • Assistere il Chalet Manager nel fornire un'esperienza ospite eccezionale e senza soluzione di continuità durante ogni soggiorno.
  • Pianificare menu stagionali in consultazione con gli ospiti, quando richiesto.
  • Gestire l'intero processo di preparazione degli alimenti, inclusa approvvigionamento, preparazione, cottura e presentazione.
  • Garantire che i menu riflettano requisiti dietetici, preferenze e restrizioni su allergeni in ogni momento.
  • Mantenere flessibilità per adattare i menu in base alle esigenze degli ospiti e alla disponibilità dei prodotti.
  • Gestire ordini e acquisti di cibo e bevande per la proprietà utilizzando fornitori approvati.
  • Gestire le relazioni con i fornitori in modo professionale e in linea con i processi aziendali.
  • Comprendere che sconti e commissioni fornitori sono entrate aziendali e non devono essere accettate privatamente.
  • Essere presenti in proprietà per ricevere e gestire tutte le consegne.
  • Mantenere standard di pulizia e igiene all'avanguardia in cucina in ogni momento.
  • Assicurare che tutte le aree della cucina, attrezzature e superfici siano impeccabili dopo ogni servizio e al termine di ogni soggiorno.
  • Seguire procedure rigorose di sicurezza alimentare, conservazione e gestione in linea con standard aziendali e legali.
  • Gestire in modo responsabile il budget alimentare dello chalet e mantenere conti accurati secondo i processi del resort.
  • Effettuare conteggi di magazzino e controlli delle scorte durante la stagione come indicato dalla direzione.
  • Approvvigionarsi di ulteriori elementi (es. attrezzature da cucina, stoviglie, ingredienti) solo tramite sistemi approvati.
  • Garantire che non avvenga trasferimento di beni tra proprietà senza autorizzazione preventiva.
  • Assistere nei cambi di chalet durante i giorni di turnover insieme al team della proprietà.
  • Supportare l'accoglienza all'arrivo e alla partenza degli ospiti, incluse le operazioni di bagagli.
  • Svolgere piccole manutenzioni della proprietà quando necessario (es. sostituzione lampadine, riparazioni minori), con escalation dove opportuno.
  • Supportare il Chalet Manager nel garantire che le aspettative degli ospiti siano costantemente superate.
  • Garantire la piena conformità a tutte le norme di salute e sicurezza e alle leggi locali.
  • Non servire mai cibi contenenti allergeni noti agli ospiti.
  • Mantenere la reputazione del marchio attraverso comportamento professionale ed eccellenza nel servizio.
  • Agire immediatamente per segnalare eventuali danni o problemi della proprietà.
  • Seguire la politica aziendale in tutte le questioni relative alla sicurezza degli ospiti, al comportamento e agli standard di servizio.
  • Partecipare a tutte le riunioni informative e operative secondo necessità.
  • Supportare la risoluzione delle controversie a livello locale prima dell'escalation al management.
  • Implementare tutti i processi, aggiornamenti e procedure operative come indicato.

This position is a 43.5 hours contract perk week - starting from 27th of November 2026 to 24th of April 2027. Role: As a Bramble Ski Chalet Chef, you are responsible for delivering an exceptional culinary experience that sits at the very heart of the guest journey. You create refined, beautifully presented food that elevates every stay, ensuring guests enjoy restaurant‑quality dining in the comfort of their private alpine chalet. This is a hands‑on, creative, and highly rewarding role where attention to detail, organisation, and passion for food come together to shape unforgettable moments. From tailored menus to flawless execution, you ensure every meal reflects the standard and style of a luxury ski experience. You work closely with the Chalet Manager and wider property team to deliver seamless service, anticipate guest preferences, and adapt menus where required—always ensuring consistency, quality, and excellence across every service.

Responsabilities:
Culinary Delivery & Guest Experience
  • Undertake all day‑to‑day chef duties to ensure guest expectations are consistently met and exceeded in line with the advertised package and company processes
  • Prepare breakfast* , afternoon tea, canapés, and elegant evening meals to a high culinary standard
  • Occasionally prepare additional meals such as lunches or late‑night snacks where agreed with resort or central management
  • Assist the Chalet Manager in delivering an exceptional and seamless guest experience throughout each booking
Menu Planning & Food Preparation
  • Plan seasonal menus in consultation with guests where required
  • Manage full food preparation processes including sourcing, prep, cooking, and presentation
  • Ensure menus reflect dietary requirements, preferences, and allergen restrictions at all times
  • Maintain flexibility to adapt menus based on guest needs and product availability
Ordering, Shopping & Supplier Management
  • Undertake all food and drink ordering and shopping for the property using approved suppliers
  • Ensure supplier relationships are managed professionally and in line with company processes
  • Understand that supplier discounts and commissions are business revenue and must not be accepted privately
  • Be present at the property to receive and manage all deliveries
Kitchen Operations & Hygiene
  • Maintain best‑in‑class kitchen cleanliness and hygiene standards at all times
  • Ensure all kitchen areas, equipment, and surfaces are left spotless after each service and at the end of each booking
  • Follow strict food safety, storage, and handling procedures in line with company and legal standards
Stock, Budget & Administration
  • Manage chalet food budgets responsibly and maintain accurate accounts in line with resort processes
  • Conduct stocktakes and inventory checks throughout the season as instructed by management
  • Source additional items (e.g., kitchen equipment, crockery, ingredients) through approved systems only
  • Ensure no transfer of goods between properties without prior authorisation
Property & Team Support
  • Assist with chalet changeovers on turnover days alongside the property team
  • Support meet‑and‑greet guest arrivals and departures where required, including luggage assistance
  • Undertake basic property maintenance tasks when necessary (e.g., changing bulbs, minor fixes), escalating where appropriate
  • Support Chalet Manager in ensuring guest expectations are consistently exceeded
Compliance, Safety & Conduct
  • Ensure full compliance with all Health & Safety regulations and local laws
  • Never serve food containing known guest allergens
  • Uphold brand reputation through professional behaviour and consistent service excellence
  • Act immediately to report any property damage or issues
  • Follow company policy in all matters relating to guest safety, conduct, and service standards
Operations, Flexibility & Company Support
  • Attend all staff briefings and operational meetings as required
  • Support dispute resolution at a local level before escalation to management
  • Implement all company processes, updates, and operational procedures as instructed
  • May be required to support Haute Montagne bookings, including breakfast service or assisting another chef during the season
  • May be required to provide short-term cover across Bramble Ski or Haute Montagne operations in Austria, France, and Switzerland

Schedules & specificities: Bramble Ski operates in accordance with Austrian labour law and applicable collective agreements. Due to operational requirements, work on Saturdays and Sundays may be required, particularly during high season. Working schedules are organized on a rotating basis and communicated at least one week in advance, in coordination with the wider team. All scheduling complies with Austrian regulations on working time, rest periods, and maximum weekly working hours. Overtime is managed in line with Austrian labour law and applicable collective agreements and is compensated either through time off in lieu or payment, as legally required. All scheduling and compensation practices must remain fully compliant with Austrian labour law, and adjustments will be made where necessary to ensure ongoing compliance. vetrinabakeca
