About the Company

Delhi-based food business launching its first branch in Mumbai. The company is expanding into the Mumbai market with a focus on delivering high-quality sweets, bakery products, caf offerings, and an excellent customer experience.

This is an exciting opportunity for an experienced operations professional to play a key role in establishing and successfully managing the Mumbai outlet.

Position Summary

We are looking for an experienced and result-oriented Senior Manager with strong expertise in managing sweets, bakery, and caf outlet operations.

The candidate will be responsible for the overall performance of the outlet, with a strong focus on sales growth, customer satisfaction, product quality, team management, operational excellence, cost control, and profitability.

The ideal candidate should be hands-on, commercially focused, customer-oriented, and capable of managing a fast-paced food retail environment.

Key Responsibilities

1. Outlet Operations

• Manage day-to-day operations of the sweets, bakery, and caf outlet.
• Ensure smooth functioning of all operational activities from opening to closing.
• Maintain high standards of service, hygiene, cleanliness, and operational discipline.
• Ensure adherence to company SOPs, processes, and operating standards.
• Coordinate with Production, Kitchen, Stores, Purchase, Accounts, and Management teams.

2. Sales & Business Development

• Drive daily, monthly, and annual sales targets.
• Develop strategies to increase footfall, average transaction value, repeat customers, and overall revenue.
• Monitor sales performance and identify opportunities for business growth.
• Implement promotional activities and local marketing initiatives in coordination with Management.
• Track competitors, market trends, pricing, and customer preferences.

3. Customer Experience

• Ensure an excellent customer experience across the outlet.
• Handle customer feedback, complaints, and service issues professionally and promptly.
• Develop strong customer relationships and encourage repeat business.
• Monitor service standards and improve customer satisfaction.

4. Team Management

• Lead, supervise, and motivate outlet staff, including sales, service, caf, and support teams.
• Prepare staff schedules and ensure adequate manpower availability.
• Monitor employee performance, attendance, grooming, discipline, and productivity.
• Conduct on-the-job training and ensure employees follow service and operational standards.
• Build a positive and customer-focused team culture.

5. Product Quality & Presentation

• Ensure consistency in taste, freshness, quality, portioning, packaging, and presentation.
• Coordinate with the production/kitchen team to maintain product standards.
• Monitor product availability and ensure minimum stock-outs during business hours.
• Ensure proper handling, storage, display, and rotation of food products.

6. Inventory & Cost Control

• Monitor inventory of sweets, bakery products, caf ingredients, packaging materials, and other consumables.
• Control wastage, pilferage, expiry, and product losses.Ensure proper stock handling and FIFO/FEFO practices.
• Monitor food costs, operating expenses, and resource utilization.
• Coordinate with Purchase and Stores for timely replenishment.

7. Food Safety & Hygiene

• Ensure strict compliance with food safety, hygiene, sanitation, and cleanliness standards.
• Ensure employees follow personal hygiene and food-handling practices.
• Maintain proper documentation and records as required.
• Support internal and external audits and regulatory inspections.

8. MIS & Performance Monitoring

• Prepare and review daily/weekly/monthly sales and operational reports.
• Track key outlet KPIs including sales, margins, wastage, customer complaints, manpower productivity, and expenses.
• Provide regular performance updates and business insights to the General Manager/Management.
• Take corrective action wherever performance is below target.

Candidate Profile

• Graduate in Hotel Management, Hospitality, Business Management, or a related field preferred.
• 812+ years of relevant experience in sweets, bakery, caf, QSR, restaurant, food retail, or FMCG outlet operations.
• Strong hands-on experience managing retail food outlets and customer-facing operations.
• Proven experience in achieving sales targets and managing outlet profitability.
• Strong team leadership and people-management skills.
• Good understanding of inventory, food cost, wastage, and operational controls.
• Strong knowledge of food safety, hygiene, and customer service standards.
• Excellent communication, interpersonal, problem-solving, and decision-making skills.
• Should be willing to work in a hands-on operational role and manage the outlet during peak business hours, weekends, and festive periods.

Preferred Industry Experience

Candidates from Sweets & Mithai, Bakery, Caf, QSR, Restaurant, Food Retail, FMCG, or Premium Food & Beverage brands will be preferred.
