Blue Tokai Coffee Roasters seeks a Junior Roaster to join our roasting team in India. You will apply foundational roasting knowledge and contribute to daily production, while gaining exposure to green coffee evaluation, cupping, sensory development, data management and roast profile consistency.
The role requires 2–4 years of roasting experience, familiarity with Cropster and ERP systems, and a willingness to work night shifts.

As a Junior Roaster, you will apply your foundational roasting and coffee knowledge independently while contributing to daily production output. The role involves hands-on exposure to green coffee evaluation, roasting, cupping, sensory development, data management and maintaining consistency across roast profiles.
Green Coffee Knowledge
Identify and maintain working knowledge of green beans across the full active inventory.
Perform physical evaluation of green coffee, including moisture, density and grading.
Maintain a working understanding of active blend compositions.
Cupping & Sensory
Demonstrate intermediate cupping ability and remain calibrated to the team standard.
Continue developing sensory skills through regular training and calibration.
Assist with LCQC sample distribution and related sensory activities.
Roasting Practice
Demonstrate working knowledge of Cropster, including RI, Cup and Dashboard.
Execute roasting across Vienna, French and other assigned roast profiles with 85%+ consistency against defined roast goals.
Successfully complete the intermediate roaster-understanding assessment.
Carry out basic maintenance and operational checks on Probat and ESP equipment, where applicable.
Data & Stock Management
Maintain accurate Cropster entries and support basic Cropster and dashboard management.
Support basic inventory and stock management for green and roasted coffee.
Ensure roasting and production records are maintained accurately.
Learning & Development
Actively participate in ongoing roasting and sensory training.
Assist with public-facing and interdepartmental coffee classes and sessions.
Contribute to continuous improvement initiatives within the roasting team.
2–4 years of relevant experience in coffee roasting.
SCA certification/training will be preferred.
Basic understanding of ERP systems and inventory processes.
Good understanding of coffee roasting, sensory evaluation and green coffee.
Strong attention to detail and consistency.
Ability to work comfortably in night shifts as required.
5-day working week & 2 weekly offs
