Mount Wolseley Hotel, Spa & Golf Resort in Carlow, Ireland, is seeking a Restaurant Manager to lead operations for Fredrick's Restaurant and The Green Room. The role reports to the Operations Manager and requires a professional, guest-focused leader with a track record in high-volume service.

The ideal candidate brings 2+ years as a Restaurant Manager, front-line leadership, and impeccable grooming and presentation.

Qualifications

• Minimum 2+ years experience as a Restaurant Manager.
• Experience handling 600+ covers per day (breakfast, lunch, dinner).
• Previous work in a 4- or 5-star restaurant.
• Experience managing a large diverse team.

Responsibilities

• Manage Fredrick's Restaurant and The Green Room operations.
• Meet restaurant goals by executing marketing and sales strategies.
• Oversee staff performance, conduct reviews and probation processes.
• Utilize forecasting to manage daily operations and future planning.

The suitable candidate will have the opportunity to join this renowned 4* Deluxe Spa & Golf Resort and will be the professional face of Mount Wolseley Hotel Wedding Segment.

Requirements

• Have 2+ years experience as a Restaurant Manager

• Experience managing 600+ covers per day (including Breakfast, lunch and dinner)

• Previous experience working in a 4 or 5* Restaurant

• Pervious experience managing a large diverse team

• Excellent interpersonal skills and business acumen

• Meticulous attention to detail and immaculate grooming/presentation

• Intermediate computer skills and fluency in English

• Strong customer service, communication

Responsibilities

• Manage all actives of both Fredrick's Restaurant and The Green Room

• Achieve Restaurant goals by executing marketing and sales strategies

• Manage staff performance, carry out performance and probation reviews

• Manage systems in line with forecasting on a day to day basis and in advance

• Identify talent within the Restaurant team for progression

• Motivate and influence the Restaurant team in a professional manner

• Develop and maintain a relationship between other Departments within the Hotel to ensure operational excellence and smooth running

• Develop and maintain a professional relationship between other Head of Departments

• Manage and lead the health and safety of the Department

• Delegate tasks and responsibilities to Waitstaff and Supervisors

• Work alongside the Executive Head Chef and other staff members to implement and style menus and specials

• Manage the communication from management to staff in the Department

• Attend Management meetings when required

• Manage and control staffing budgets

• Manage and control costs and stock

• To carry out Duty manager shifts
