Job summary

Castle Leslie Estate is seeking a Junior Sous Chef to support the Head Chef and lead the Conor's Bar kitchen in delivering memorable dining experiences. This is a pivotal step for an ambitious chef within a renowned hospitality destination.

You will work under senior chefs on seasonal menus, train junior staff, manage stock, and uphold HACCP and hygiene standards in a fast-paced environment at Castle Leslie Estate.

Qualifications

• Chef de Partie: 2 year minimum (required)

Responsibilities

• Support the day-to-day operation of Conor's Bar kitchen, ensuring smooth and efficient service.
• Lead and inspire your section, maintaining the highest standards of food quality, consistency, and presentation.
• Assist in training, mentoring, and developing junior team members.
• Work closely with senior chefs on seasonal menu development, creative dish presentation, and kitchen innovation.
• Help manage stock control, food ordering, and kitchen organisation while minimising waste.
• Ensure all food safety, HACCP, and hygiene standards are consistently upheld.
