Iconic Castle Hotel Venue in Co. Cavan is seeking an Operations Manager to act as second in command and drive day-to-day commercial and operational performance.

The role covers F&B and banqueting, cost control, rostering, standards, and deputising for the GM.

Salary is negotiable and DOE; candidates should be eligible to work in Ireland.

Salary: Negotiable, DOE Are you a hospitality operator who's as comfortable running a 300-cover banquet as you are dissecting a P&L? We want to hear from you. We're recruiting an Operations Manager for a landmark castle hotel venue in Co. Cavan - a property renowned for weddings, banqueting and events at scale. This is a genuine number two role, working directly alongside the General Manager to drive the day-to-day commercial and operational performance of the business.

The Role

• F&B and banqueting operations - leading large-scale weddings, events and conferences from planning through to flawless execution
• Commercial performance - GP%, food cost and labour cost management across all outlets
• Productivity and rostering - building efficient, well-run teams without compromising guest experience.
• Standards and service - protecting the property's reputation as a premier events destination.
• Deputising for the GM - stepping up with full authority when required.

What We're Looking For

• A strong background in F&B and banqueting operations, ideally within a high-volume hotel, castle, or events venue
• Commercially sharp - genuinely comfortable with GP%, cost control, and labour productivity, not just service delivery
• Proven leadership of large teams across multiple departments
• Someone who thinks like an owner: protective of margin, obsessive about standards, calm under event-day pressure.
• Ambition to grow into a GM role in time.
