Job summary

Pen and Player in Dublin seeks a dynamic Cocktail Bar Manager to lead operations, deliver warm Irish hospitality, and curate a premium cocktail experience for discerning guests. You will be the face of the venue, driving service excellence, overseeing staff recruitment, training, scheduling, inventory and compliance, and coordinating events.

About Us:

Nestled within the heart of Dublin, Pen and Player is a luxurious cocktail bar set to elevate the city's nightlife scene. We're seeking a dynamic and experienced Cocktail Bar Manager to join our team and create memorable moments for our guests.

Role Information:

As our Cocktail Bar Manager, you'll be the face of our establishment, embodying warmth, sophistication, and genuine Irish hospitality. You'll ensure Pen and Players high standards are met and our guests enjoy a premium cocktail experience. Your passion for mixology and deep knowledge of our cocktail offerings will enhance the guest experience, while your impeccable management skills will ensure the team leave a lasting impression.

• Staff Management: Oversee the recruitment, training, and scheduling of bar staff, ensuring a skilled and efficient team. Address performance issues, conduct regular staff meetings, and foster a positive working environment.
• Inventory Control: Manage and monitor the bar's inventory, including ordering supplies, tracking stock levels, and minimizing wastage. Implement cost-control measures to maximize profitability while maintaining a diverse and well-stocked selection
• Customer Service Excellence: Ensure high standards of customer service by training staff on service protocols, maintaining a welcoming atmosphere, and promptly addressing customer feedback or concerns. Monitor and maintain a clean and well-maintained bar area.
• Compliance and Licensing: Stay abreast of all relevant regulations related to alcohol service and ensure the bar operates in full compliance with Irish law. Maintain necessary licenses, and implement policies to prevent underage drinking and over-service.
• Financial Management: Develop and manage the bar's budget, tracking revenue and expenses. Implement pricing strategies, promotions, and upselling techniques to optimize sales. Regularly analyse financial reports to identify trends and areas for improvement.
• Event Coordination: Plan and execute special events, promotions, attract a diverse customer base. Collaborate with other departments to ensure seamless coordination for events such as conferences, and private parties that involve bar services.

Requirements:

• 3+ years previous hotel/hospitality work experience in a Bar supervisory or management level preferred.
• Ability to write and communicate with guests, solve multiple problems at the same time, set up priorities, organize work and make certain decisions.
• Excellent communication skills in the English Language and people management experience.
• Ability to develop team members and to work in a team environment.
• Demonstration of experience & success in managing a project or strategic change in the business.
