Job summary

Fota Island Resort in Ireland is seeking a dynamic Bar Manager to lead a busy beverage operation across multiple outlets, including conferences and banquets. You will manage staff, ensure service excellence, and drive revenue through a well-crafted drinks program.

The role requires strong leadership, menu development, stock control, and compliance with licensing laws. This full-time, on-site position offers staff benefits and opportunities to grow with our hospitality team.

Qualifications

• Proven experience as a Bar Manager or similar role in a hotel or busy bar setting with multiple outlets
• Strong leadership and team management skills
• Excellent knowledge of bar operations, including beverage menu development, cocktail preparation, wine selection and industry trends
• Good financial understanding, including budgeting and stock control
• Ability to work flexible hours, including evenings, weekends, and holidays

Responsibilities

• Manage daily operations of the bar outlets, ensuring smooth and efficient service
• Ensure compliance with all alcohol licensing laws and regulations
• Recruit, train, and supervise bar staff
• Create and maintain a high-quality beverage menu, including signature cocktails
• Monitor inventory and place orders to maintain stock levels
• Ensure compliance with health and safety regulations
• Drive revenue through promotions, events, and upselling techniques
• Handle customer queries and resolve complaints promptly and professionally
• Maintain cleanliness and presentation standards of the bar area
• Work closely with the Resort F&B Manager and Hotel Management team
