Job summary

Trim Castle Hotel, a boutique four-star property in Trim, is launching The Bastion Kitchen & Bar and seeks an experienced Bar Manager to lead the team and execute a premier bar program in a luxury hotel setting.

You will oversee daily operations, develop menus with the Head Chef, implement revenue-driving strategies, and ensure compliance with health, safety, and licensing regulations while delivering unforgettable guest experiences.

Qualifications

• Experience in a managerial role within a high-volume bar or luxury hotel.
• Strong knowledge of mixology and beverage trends.
• Proven track record of delivering exceptional customer service.
• Excellent leadership and interpersonal skills with the ability to motivate a team.
• Strong organizational and time management abilities.
• Solid understanding of bar operations, stock control, and cost optimisation.

Responsibilities

• Oversee daily bar operations, ensuring smooth functioning and exceptional service.
• Lead and inspire the team, fostering a positive work environment.
• Recruit, train and develop bar staff to deliver high standards of service.
• Create and maintain bar menus for The Bastion and function bars with the Head Chef.
• Develop strategies to promote the bars and increase revenue.
• Monitor inventory levels, order supplies and manage stock control.
• Maintain knowledge of industry and cocktail trends and apply them.
