Job summary

Talbot Hotel Carlow is recruiting a Bar and Bistro Manager to lead the bar and dining operation to a 4-star standard. You will oversee staff, scheduling, food quality, event liaison, and health and safety compliance while driving exceptional guest experiences.

The role requires multi-year experience in F&B leadership, team management, and strong financial acumen, with a focus on guest satisfaction and a professional, collaborative approach within the Talbot Collection.

Qualifications

Have 3 years' experience managing a venue that served both food and beverage.
Experience managing a hotel bar is a distinct advantage.
Have 2 years' experience managing a team.
Have good financial acumen and 2 years' experience managing rosters, wages, stock and margins.
Be passionate about guest satisfaction and service delivery.
Be organised and able to communicate clearly with colleagues.

Responsibilities

Set and implement Food and Beverage standards in line with management.
Ensure guests are greeted on arrival and their needs are met.
Control costs, particularly wages and stock margins.
Liaise with Sales/Marketing on events and with Head Chef on food quality.
Train staff to meet agreed standards and comply with Health & Safety.
Participate in recruitment, appraisals and staff uniform standards.
Attend weekly management meetings and drive 4-star service.

Overall Job Purpose

To ensure the smooth running of the Bar and Bistro department by deliver exceptional friendly service at all times, to every guest, in line with the Talbot Collection 'Empower Your Excellence' customer service program.

Role Specific Duties

To set and implement all Food and Beverage standards as agreed with the General Manager
To ensure that all guests are met on arrival and all needs catered for
To ensure that all costs are controlled, particularly wages
To liaise closely with the Sales and Marketing team regarding all events
To liaise closely with the Head Chef regarding food quality
To ensure that staff are fully trained in the delivery of the agreed standards
To comply with all Health and Safety regulations
To work closely with HR concerning recruitment and appraisals and follow the company procedures in this area
To carry out appraisals on all departmental staff when and as required to assess performance and development needs
To ensure staff are correctly uniformed and presented to the highest possible level
To carry out Duty Management as required and assist in other areas of the hotel as required
To attend weekly management meetings and feedback all relevant information to the team
To ensure a 4-star standard is maintained at all times and to strive to constantly exceed customer expectation

The successful candidate will

Have 3 years' experience managing a venue that served both food and beverage. Experience managing a hotel bar would be a distinct advantage.
