Job summary

Talbot Hotel Carlow is seeking a Bar and Bistro Manager to lead the bar and dining operations, delivering exceptional service that aligns with the Talbot Collection standards and the 4-star guest experience.

You will manage staff, oversee cost controls including wages, partner with Sales for events and work with the Head Chef on food quality, while driving recruitment and appraisals in a collaborative team environment.

Qualifications

3+ years experience managing a venue that serves food and beverage.
2+ years experience managing a team; strong financial acumen and rostering/wages/stock/margins experience.

Responsibilities

Set and implement Food and Beverage standards as agreed with the General Manager.
Ensure guests are greeted on arrival and needs catered for.
Control costs, particularly wages.
Liaise with Sales and Marketing regarding events.
Liaise with Head Chef on food quality.
Train staff in agreed standards.
Comply with Health and Safety regulations.

Overall Job Purpose:

To ensure the smooth running of the Bar and Bistro department by deliver exceptional friendly service at all times, to every guest, in line with the Talbot Collection ‘Empower Your Excellence’ customer service program.

Role Specific Duties:

To set and implement all Food and Beverage standards as agreed with the General Manager
To ensure that all guests are met on arrival and all needs catered for
To ensure that all costs are controlled, particularly wages
To liaise closely with the Sales and Marketing team regarding all events
To liaise closely with the Head Chef regarding food quality
To ensure that staff are fully trained in the delivery of the agreed standards
To comply with all Health and Safety regulations
To work closely with HR concerning recruitment and appraisals and follow the company procedures in this area
To carry out appraisals on all departmental staff when and as required to assess performance and development needs
To ensure staff are correctly uniformed and presented to the highest possible level
To carry out Duty Management as required and assist in other areas of the hotel as required
To attend weekly management meetings and feedback all relevant information to the team
To ensure a 4-star standard is maintained at all times and to strive to constantly exceed customer expectation

The successful candidate will:

Have 3 years’ experience managing a venue that served both foodandbeverage. Experience managing a hotel bar would be a distinct advantage.
Have 2 years’ experience managing a team;
Have good financial acumen and 2 years’ experience managing rosters, wages, stock and margins;
Be passionate and motivated by guest satisfaction;
Be organised and have excellent communication and interpersonal skills;
Be a team player
