You will be part of a team but must also work on your own initiative with a proven track record in following recipes, food preparation and hygiene procedures. Responsibilities

• Preparing dough for various breads, using weigh scales and ingredient recipe sheets.
• Controlling dough fermentation, Shape products & part-bake as require.
• Manage all sourdough culture & refresh for production.
• Maintain production schedule without supervision.
• Complete production records to include the tracking of waste, temperature and quality.
• Maintain hygiene and orderliness of all equipment, supplies and utensils within the work area.
• Handle all food items correctly in keeping with HACCP training.
