Job summary

The Luxury Collection Bali Jimbaran is seeking an experienced Kitchen Stewarding Manager to lead daily utility operations, manage dish room and night cleaning, and supervise kitchen staff. The role focuses on maintaining high standards of cleanliness, safety, and efficiency while achieving budget goals in a luxury hotel setting.

Ideal candidates have 5–8 years in stewarding, 2–3 years in a supervisory role, and a background in banquet/high-volume operations, with pre-opening or luxury brand

Qualifications

• Diploma or degree in hospitality management or related field.
• Certified in Food Safety and Hygiene (HACCP preferred).
• Occupational Health & Safety certification is an advantage.
• Knowledge of environmental and sustainability practices.
• Minimum 5-8 years of stewarding experience in hotels/resorts or large-scale food service.
• Minimum 2-3 years in a supervisory or managerial stewarding position.
• Experience managing banquet and high-volume operations.
• Pre-opening hotel experience is highly preferred.
• Experience in luxury hotel or international brand operations is advantageous.

Responsibilities

• Manages day-to-day kitchen utility operations and staff.
• Coordinates dish room operations, night cleaning, and back dock cleaning.
• Supervises kitchen employees not actively cooking.
• Monitors supplies, equipment, and uniforms; ensures availability.
• Ensures compliance with food handling and sanitation standards.
• Leads and develops kitchen team and controls costs.
• Ensures safety and sanitation, loss prevention, and budget goals.

Education

Diploma or Degree in Hospitality Management

HACCP certification

OH&S certification

Sustainability practices knowledge

5-8 years stewarding experience in hotels/resorts

2-3 years supervisory or managerial stewarding experience
