Corner House Group is seeking a Senior Cook for its Chinese restaurant in Bali. You will lead a kitchen section, ensure consistent quality, and support the Sous and Head Chefs in daily operations. Proficiency in Chinese cooking techniques and strong attention to food safety are essential.

Ideal candidates bring 2–4 years in Chinese cuisine, a culinary diploma, and the ability to manage prep, portions, and inventory while maintaining high presentation standards in a busy service environment.

Qualifications

• Minimum 2–4 years experience in Chinese cuisine.
• Diploma or vocational diploma in Culinary Arts/Hospitality Management.
• Proficient in Chinese cooking techniques: stir-fry, wok, steaming, deep-frying, braising, blanching.
• Know Cantonese, Szechuan, Chinese seafood, dim sum, soups, sauces.
• Wok operation with temperature control to achieve distinctive flavors.
• Cutting, slicing, marinating, portioning to restaurant standards.
• Maintain consistent taste, texture, doneness, portions, and plating.
• Manage a kitchen section independently; lead junior staff.
• Knowledge of portion control, FIFO, inventory, and waste reduction.
• Food safety, hygiene, storage, temperature control, HACCP standards.
• Assist in menu development and follow standard recipes.
• English proficiency is an advantage.
• Disciplined, responsible, detail-oriented, efficient, proactive, team player.
