Job summary

Mercure Hotels in Jakarta Selatan seeks an enthusiastic Kitchen Assistant to support daily food preparation and uphold kitchen hygiene standards. You will follow Chef instructions, assist with basic cooking, and help maintain safe storage and labeling of ingredients.

The role requires stamina for long shifts, willingness to work weekends/holidays, and teamwork to keep the kitchen running smoothly during peak times.

Qualifications

• SMA/SMK or equivalent; culinary/hospitality background preferred.
• Previous kitchen or hotel kitchen experience is an advantage.
• Basic knowledge of food preparation and kitchen tools.
• Understanding of food safety and HACCP principles preferred.
• Physically able to stand for long periods and work shifts.
• Willing to work weekends and public holidays as required.

Responsibilities

• Assist the Chef and kitchen team with daily food preparation, including washing, peeling, cutting, and portioning ingredients.
• Prepare raw materials, ingredients, and kitchen equipment according to the instructions of the assigned Chef.
• Assist in basic cooking activities under the supervision of the Chef or designated kitchen team member.
• Ensure all ingredients are properly stored, labeled, and handled according to food safety and hygiene standards.
• Maintain the cleanliness and sanitation of kitchen workstations, utensils, equipment, and storage areas.
• Follow proper food handling procedures to prevent cross-contamination and maintain food quality.
• Check the freshness and quality of ingredients and report any spoiled or damaged items to the supervisor.
• Assist with receiving, arranging, and storing kitchen supplies when required.
• Ensure kitchen equipment and utensils are used safely and returned to their designated places after use.
• Support the kitchen team during meal preparation and peak operational periods.
• Follow the hotel's HACCP procedures, food safety standards, and occupational health and safety requirements.
• Minimize food waste and use ingredients and kitchen supplies responsibly.
• Assist with kitchen closing duties, including cleaning workstations and organizing equipment and ingredients.
• Perform other kitchen-related duties as assigned by the Chef or authorized supervisor.
