Aloita Resort Mentawai is seeking an experienced Head Chef to oversee daily kitchen operations across Aloita Resort, Sunset Villa, Makakan Estate, and Captain House. You will lead kitchen teams, maintain consistency of quality and presentation, and manage menus for restaurant service, breakfast, in-room dining, events, and guest requests.

The ideal candidate has at least 3 years in a senior kitchen role, strong Indonesian, Asian, and Western cuisine knowledge, and proven ability to control

Qualifications

• Minimum 3 years of experience in a Head Chef or senior kitchen leadership role.
• Experience in hotel, resort, restaurant, or villa environments preferred.
• Strong knowledge of Indonesian, Asian, and Western cuisines.
• Proven ability to manage kitchen operations, food costs, inventory, purchasing, and stock control.
• Familiarity with recipe standardization, HACCP, hygiene and food safety.

Responsabilités

• Oversee daily kitchen operations across four properties: Aloita Resort, Sunset Villa, Makakan Estate and Captain House.
• Plan and execute menus for restaurant service, breakfast, private villas, in-room dining, events, and guest requests.
• Maintain consistent food quality, taste, presentation, and portion control across kitchens.
• Monitor food costs, budgets, purchasing, inventory, stock rotation, and supplier relationships.
• Develop and maintain standardized recipes, recipe cards, and kitchen procedures.
• Plan staffing, scheduling, training, and daily task allocation; support recruitment and staff performance management.
• Ensure compliance with food safety, hygiene, sanitation, and storage standards across all properties.
• Minimize waste and maximize efficient use of ingredients.
• Coordinate with F&B and Operations teams for guest preferences and events.
• Monitor guest feedback and continuously improve quality and offerings.
